WHITE CHOCOLATE STRAWBERRY ROSé TRUFFLES
Grab your girlfriends and say yes way rosé with these white chocolate rosé truffles featuring Missouri wines.

- In a medium-sized saucepan, add the white chocolate, butter, heavy cream, and salt. Melt over medium-low heat, stirring frequently.
- While the chocolate is melting, add the freeze-dried strawberries to a food processor and pulse. You want to reduce the freeze-dried strawberries down to small pieces. If you don't have a food processor, simply place the freeze-dried strawberries onto a sheet of parchment paper, cover with another sheet of parchment paper and crush using your hands or a rolling pin.
- Continue stirring the chocolate until it's completely melted. Add in the strawberries and rosé and stir to combine. Transfer to a mixing bowl, cover with plastic wrap and place into the refrigerator to solidify for about 2-3 hours.
- Once the truffle mix is solid enough to scoop out and roll into a ball, remove from refrigerator and begin the rolling process.
- Add the powdered sugar to a bowl, then scoop out about 1 Tbsp. of the truffle mix and gently roll into a ball with your hands. Next, roll the ball in the powdered sugar and place onto a platter or storage container.
- Continue the rolling process until all of the truffle mix has been rolled into balls and covered in powdered sugar.
- Place the white chocolate strawberry rosé truffles back into the refrigerator for at least 30 minutes before serving.
- Keep covered and refrigerated until ready to serve.

- Place chocolate in a food processor; cover and process until chopped. In a small saucepan, bring cream just to a boil. Pour over chocolate; cover and process until smooth. Stir in spreadable fruit and vanilla until combined. Transfer to a small bowl; cool to room temperature, stirring occasionally. Refrigerate until firm, about 3 hours., Shape into 1-in. balls. Roll in almonds.

CHOCOLATE TRUFFLES
Steps:
- Chop the chocolates finely with a sharp knife. Place them in a heat-proof mixing bowl.
- Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve into the bowl with chocolate. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the Grand Marnier, if using, coffee, and vanilla. Set aside at room temperature for 1 hour.
- With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Refrigerate for 30 minutes, until firm. Roll each dollop of chocolate in your hands to roughly make a round ball. Roll in confectioners' sugar, cocoa powder, or both. These will keep refrigerated for weeks, but serve at room temperature.
WHITE CHOCOLATE-DIPPED STRAWBERRIES

White chocolate-covered strawberries are drizzled with chocolate for a shareable treat that makes the dessert tray look oh-so-pretty. Make homemade white chocolate strawberries by heating white baking chips and shortening until melted. Dip each strawberry three-fourths of the way into melted chips, drizzle with melted semisweet chocolate chips and refrigerate.

- Cover cookie sheet with waxed paper. Heat white baking chips and 1 tablespoon shortening in 2-quart saucepan over low heat, stirring constantly, until chips are melted.
- For each strawberry, poke fork or toothpick into stem end, and dip three-fourths of the way into melted chips, leaving top of strawberry and leaves uncoated. Place on waxed paper-covered cookie sheet.
- Heat semisweet chocolate chips and 1 teaspoon shortening in 1-quart saucepan over low heat, stirring constantly, until chocolate chips are melted. - Drizzle melted semisweet chocolate over dipped strawberries, using small spoon. Refrigerate uncovered about 30 minutes or until coating is set.

Steps:
- Melt the chocolate, cream and butter in a heatproof bowl over a small pan of just simmering water, or in the microwave in short blasts, stirring regularly. Stir in any flavourings you like (add them gradually and taste the mix, the flavour will be stronger when chilled). Transfer to a small baking dish or shallow container and chill until set, about 4 hrs or overnight.
- Using a large melon baller or a heaped teaspoon, scoop truffles from the set mixture, or using clean hands briefly roll between your palms, then transfer to a lined baking tray. Chill in the freezer for 30 mins to firm up.
- To decorate, melt the chocolate the same way as in step 1, leave to cool a little, then drop the chilled truffles into the chocolate and lift out with a fork. Put back on a lined baking tray and sprinkle over any toppings, if using, and chill again in the fridge for 1-2 hrs, or freeze for 30 mins if you're in a rush, until set. Store in a cool place or in the fridge until giving as a present or eating.
