This Garlic Lime Vinaigrette Salad Dressing is the perfect easy salad dressing for your spring and summer salads!

6 tablespoons lime juice (the juice from 3 limes))
6 tablespoons lime zest (the zest from 1 lime)
3/4 cup olive oil
6 cloves of garlic (or 6 teaspoons minced garlic)
1/4 teaspoon cumin
2 teaspoons salt
2 teaspoon pepper

Steps:

  • Get a mason jar and the lid.Grate the zest of the 3 limes and place them into the jar.
  • Juice the 3 limes into the mason jar.
  • Grate the garlic into the jar.
  • Add the olive oil to the mason jar.
  • Add the cumin, salt, and pepper to the jar.
  • Place the lid on the jar and shake until well combined.
  • Store in the fridge for up to 2 weeks in the mason jar.

Salad:
White fish (tilapia, mahi, cod)
Smoked paprika, salt, pepper
Romaine lettuce, chopped
Bell peppers, chopped
Red or Green Onion, chopped
Optional: avocado, cheese, tomatoes, cucumbers
Salad dressing:
1 lime, juiced and zested (about 1/4 cup lime juice)
2 tbsp extra virgin olive oil
1 clove garlic, minced
salt/pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Place the fish on a baking sheet, and sprinkle with smoked paprika, salt and pepper. Flip over the season the other side as well. Bake for 10-15 minutes, or until the fish flakes easily. Place all your salad ingredients in a serving bowl. While waiting for the fish to cook, prepare the dressing. Place all ingredients in a small jar and whisk well to combine. Add the fish on top of the salad, add dressing, and eat!

We recently stayed in a villa in Bali. The cook made this dressing a couple of times to go over a salad of mixed greens tomatoes and cucumber. She included mint in the salad-not the dressing. Her recipe was actually just equal quantities of lime juice, white (not palm) sugar, and olive oil, garlic and slat and pepper, so it's super easy to make enough for 1 or 12.

2 tablespoons distilled white vinegar
2 tablespoons fresh lime juice

1 ½ teaspoons honey

½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon ground black pepper
1 pound mahi mahi fillets, diced
½ cup plain fat-free yogurt
2 tablespoons lime juice

1 (8 ounce) package flour tortillas, warmed

Steps:

  • Combine oil, vinegar, lime juice, lime zest, honey, garlic, seafood seasoning, cumin, chili powder, and black pepper in a nonreactive bowl or large resealable zip-top bag. Add mahi mahi and marinate for 8 hours, or overnight.
  • At the same time, combine yogurt, lime juice, and cilantro for dressing in a bowl. Chill overnight while fish marinates.
