2 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup butter, cubed
1 cup water
2 large eggs, room temperature
1/2 cup sour cream
1 teaspoon almond extract
FROSTING:
1/2 cup butter, cubed
1/4 cup 2% milk
4-1/2 cups confectioners' sugar
1/2 teaspoon almond extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 375°. Grease a 15x10x1-in. baking pan., In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine butter and water; bring just to a boil. Stir into flour mixture. In a small bowl, whisk eggs, sour cream and extract until blended; add to flour mixture, whisking constantly., Transfer to prepared pan. Bake until golden brown and a toothpick inserted in center comes out clean, 18-22 minutes. Cool on a wire rack 20 minutes. , For frosting, combine butter and milk in a large saucepan; bring just to a boil. Remove from heat; gradually stir in confectioners' sugar and extract. Stir in walnuts. Spread over warm cake.

2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 cup unsalted butter
1 cup water
2 large eggs
1/2 cup sour cream (I used lite)
1 teaspoon almond extract
1/2 cup unsalted butter
1/4 cup milk (I used coconut milk)
3 cups confectioners' sugar*
1 teaspoon almond extract
3/4 cup white chocolate chips

Steps:

  • Preheat oven to 375F. Spray a 15x10x1-inch baking pan very well with floured cooking spray or grease and flour the pan; set aside.
  • To a large mixing bowl, add the first 5 ingredients and whisk to combine; set aside.
  • In a small saucepan, combine the butter, water, and bring just to a boil. Stir it into the flour mixture.
  • To a small bowl, add the eggs, sour cream, almond extract, and whisk well to incorporate. Stir it into the flour mixture.
  • Transfer batter to prepared pan and bake for about 16 to 17 minutes, or until done and a toothpick inserted into the center comes out clean (Note - the original recipe states to bake for 18 to 22 minutes however in my oven that would have been far too overdone and burnt); always bake until done whatever that means in your oven.
  • Allow cake to cool in pan on a wire rack while you prepare the frosting.
  • To a medium saucepan add the butter, milk, and bring just to a boil.
  • Turn off the heat and add the confectioners' sugar, almond extract, and whisk well to incorporate until smooth.
  • Quickly turn frosting out over the cake, smoothing it lightly with a spatula. Frosting will set up quickly.
  • Evenly sprinkle with white chocolate chips before serving.
  • Cake will keep airtight at room temp for up to 5 days. I am comfortable storing frosted desserts at room temp. If you are not, store in the fridge noting the cake will be more prone to drying out.

  • In small microwavable bowl, microwave 3 oz white chocolate and 2 tablespoons cream uncovered on High 1 minute, stirring every 30 seconds, until smooth. Cool 10 to 15 minutes.
  • In large bowl, beat cake mix, sour cream, oil, eggs and chocolate mixture with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 21 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small microwavable bowl, microwave 3 oz white chocolate and 3 tablespoons cream uncovered on High 1 minute, stirring every 30 seconds, until smooth. Cool 10 to 15 minutes.
  • In medium bowl, beat butter and 2 cups of the powdered sugar with electric mixer on medium speed until blended. Add white chocolate mixture; blend well. Add remaining powdered sugar; beat until smooth. Spread frosting over cake; sprinkle with pecans. Store loosely covered.

1 1/4 cups/250 grams granulated sugar
2 large eggs plus 1 large egg yolk, at room temperature
1 tablespoon vanilla extract
1 1/2 cups/190 grams all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 cup/180 milliliters whole milk
3/4 cup/170 grams unsalted butter, at room temperature
2 1/2 cups/310 grams confectioners' sugar
1/2 cup/45 grams cocoa powder
1/2 cup/120 milliliters sour cream
2 ounces/55 grams bittersweet chocolate, melted and cooled
1 1/2 teaspoons vanilla extract

Steps:

  • Lightly grease a 9-by-13-inch pan with nonstick spray. Heat the oven to 350 degrees.
  • Make the cake: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, 4 to 5 minutes. Beat in the eggs one at a time, then the egg yolk, scraping the sides of the bowl after each addition. Mix on medium speed until fully incorporated, about 1 minute. Add the vanilla extract and mix to combine, 15 to 30 seconds.
  • In a medium bowl, whisk the flour, baking powder, baking soda and salt to combine. Add about 1/3 of the flour mixture to the mixer and mix on low speed until incorporated, about 30 seconds. Add about half the milk and mix on low speed until incorporated, about 15 seconds more. Repeat with another batch of flour mixture, the remaining milk, then the remaining flour mixture until fully incorporated.
  • Transfer the batter to the prepared pan and spread in an even layer. Bake until a toothpick inserted into the center comes out clean and the cake is golden and separating from the pan at the edges, 30 to 35 minutes. Cool completely.
  • Meanwhile, make the frosting: Add the butter to the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed until light and fluffy, 3 to 4 minutes. Remove the bowl from the electric mixer, and sift the confectioners' sugar and cocoa into the bowl with the butter. Stir with a spatula a few times to incorporate slightly. Return the bowl to the mixer and beat on medium speed until smooth and uniform in color, 1 to 2 minutes. Add the sour cream and melted chocolate and mix on low speed until combined, about 30 seconds. Add the vanilla and salt and mix to combine.
  • Spread the frosting on the cooled cake in an even layer. Garnish with sprinkles, if desired.

  • Beat all ingredients except egg whites and Chocolate Buttercream Frosting in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally.
  • Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
  • Bake rectangle 40 to 45 minutes, 9-inch rounds 30 to 35 minutes, 8-inch rounds 23 to 28 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely.
  • Frost rectangle or fill and frost layers with Chocolate Buttercream Frosting.

4 ounces white chocolate, broken into small pieces
2 cups white sugar
1 cup butter, softened
4 eggs, separated

8 ounces white chocolate, melted and cooled
2 ¾ cups confectioners' sugar

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease and flour three 8-inch round cake pans or line with parchment paper.
  • Place chopped white chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Cream sugar and butter together using an electric mixer until fluffy. Add 4 egg yolks, 1 at a time, beating well after each addition. Mix in vanilla extract and melted chocolate.
