- In a Dutch oven over medium heat, saute the onions and peppers in olive oil for about 7-10 minutes, until slightly browned.
- Add the garlic, chili powder, cumin, and dried oregano. Saute for 1 minute, until fragrant.
- Add the ground beef with half the salt and pepper. Cook for about 10 minutes, until browned.
- Add diced tomatoes with green chiles, tomato paste, bone broth or water, and remaining salt and pepper (to taste). Bring to a simmer. Reduce heat, cover, and simmer for 1 hour.

- Heat the oil in a large pot over medium-high heat. Add the onion and bell pepper and cook, stirring, until softened, 5 to 7 minutes. Add the tomato paste, chili powder, cumin, coriander and oregano. Cook, stirring, until brick red, 2 minutes.
- Add the beef, 1 teaspoon salt and a few grinds of pepper and continue to cook, stirring, until no longer pink, 3 to 4 minutes. Add the beans, tomatoes, 1 cup water and 1/2 teaspoon salt. Bring to a simmer and cook, adjusting the heat as needed and stirring occasionally, until thickened, 35 to 45 minutes. Season with salt.

- Add the olive oil and diced onion to a large soup pot and heat over medium-high heat for approximately 5 minutes, stirring often.
- Add in the ground beef and brown until completely cooked, breaking it into small pieces as it cooks. (approx. 7-8 minutes)
- Add the broth, tomatoes, drained beans, chili powder, cumin, garlic powder, salt, paprika, pepper, and cayenne (if using).
- Bring to a low boil.
- Then reduce the heat to simmer and cook uncovered for 30-45 minutes, stirring occasionally.
- Remove from the heat and enjoy!

- Heat a large Dutch oven or similar large, sturdy-bottomed pot over medium heat. Add the ghee or oil. When it is hot, add the meat, onion, salt, and pepper. Cook, breaking apart and browning the meat, until the it is no longer pink and the onion is beginning to soften, about 7 minutes. If it seems very greasy, drain it off (the amount of fat that cooks off will depend upon the meat you use).
- Add the oregano, chili powder, cumin, chipotle chili powder, garlic powder, and cinnamon. Stir to evenly coat the meat and vegetables with the spices. Cook until fragrant, about 30 seconds.
- Splash in about 1/2 cup of the broth and run a wooden spoon or rubber spatula along the bottom of the pot to scrape up any brown bits (this is flavor!). Add the next 1 1/2 cups broth, sweet potato, red bell pepper, green bell pepper, pumpkin and diced tomatoes and stir to evenly combine.
