- For sauce: Combine all sauce ingredients with 1/2 cup water in a medium bowl; set aside for flavors to develop while making crust. Freeze remaining paste .
- For crusts: Combine 2 cups of flour with the dry yeast, sugar and salt. Add the water and oil and mix until well blended (about 1 minute). Gradually add enough remaining flour slowly, until a soft, sticky dough ball is formed.
- Knead for about 4 minutes, on a floured surface, until dough is smooth and elastic. Add more flour, if needed. (If using RapidRise® Yeast, let dough rest, covered, for 10 minutes.)
- Divide dough in half. Pat each half (with floured hands) into a 12-inch greased pizza pan OR roll dough to fit pans.
- For pizzas: Preheat oven to 425 degrees F. Top crusts with sauce, pepperoni and cheese.
- Bake for 18 to 20 minutes until crusts are browned and cheese is bubbly. For best results, rotate pizza pans between top and bottom oven racks halfway through baking.

- In medium bowl, dissolve yeast in warm water. Stir in 2 1/2 cups flour, 2 tablespoons oil and the salt. Beat vigorously 20 strokes with spoon. Let dough rest in bowl 20 minutes.
- Meanwhile, move oven rack to lowest position; heat oven to 425°F. Grease cookie sheet with 1 tablespoon oil; sprinkle with cornmeal.
- Place dough on cookie sheet; sprinkle with 1 teaspoon flour. With floured fingers, pat dough into 12x10-inch rectangle; pinch edges to form 1/2-inch rim. Spread pizza sauce over dough. Top with remaining ingredients.
- Bake 15 to 20 minutes or until edges of crust are golden brown.

- In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Divide dough in half. Cover and let stand for 10 minutes., Roll into two 14-in. circles. Transfer to two 14-in. pizza pans coated with cooking spray. Spread oil over each crust. - In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
- Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
- When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
- Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
- Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

VEGGIE AND PEPPERONI PIZZA
I am searching for a healthier pizza, and this is my first step towards one. I plan on using turkey pepperoni and a whole wheat crust in the future, but this pizza turned out really well. - Preheat the oven to 450.
- Spread the pepperoni between two paper towels and blot to remove the excess grease.
- Brush the olive oil over the pizza crusts and cover with the pizza sauce.
- Next add the cheese, pepperoni, and tomatoes in that order.
- Finally topped with the chopped vegetables.
- Place pizzas on pizza stones or pizza pans. These really work better than cookie sheets.

- In a large bowl or in the bowl of a stand mixer, stir together water, yeast, sugar, and salt. Set aside for 5 minutes or until yeaste has bubbles and foamed, if it doesn't foam, start again with fresh yeast and check that the water isn't too hot,.
- If working by hand, stir both flours and oil into yeast mixture, until a soft dough forms. Lightly dust a clean work surace with all-purpose flour and turn dough onto it.

- Knead on low until smooth and elastic, about 8 minutes. If dough gets sticky, add 1 tablespoons all-purose flour.
- Using a paper towel, coat a large bowl with oil. Place dough in bowl, turning to coat all sides with oil. Cover bowl with plastic wrap and set aside in a warm draft-free place until doubled in size, about 1 1/2 hours.
