EASY NO-BAKE GRANOLA BARS



Easy No-Bake Granola Bars image

This granola bar recipe is so easy and delicious! These wholesome granola bars are naturally sweetened, gluten free, and the perfect healthy snack. Recipe yields 16 bars.

1 ¾ cups old-fashioned oats or quick-cooking oats
1 teaspoon ground cinnamon
½ teaspoon fine sea salt (if using regular table salt, scale back a bit)
2 cups mix-ins* (nuts, seeds, chocolate, shredded coconut or dried fruit)
1 cup creamy peanut butter or almond butter
½ cup honey or maple syrup
1 teaspoon vanilla extract

Steps:

  • Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
  • Place the oats in a large mixing bowl**. Add the cinnamon and salt, and stir to combine. Set aside.
  • Now we'll blitz the mix-ins briefly in the food processor or blender (or, you can chop them by hand). Add any large nuts (like almonds or pecans) first and blitz for a few seconds. Then add the rest and run the machine for a few more seconds, until the ingredients are all broken up into pieces smaller than your pinky nail. Pour the mix-ins into the bowl of oats.
  • In a 2-cup liquid measuring cup, measure out the nut butter. Top with ½ cup honey and the vanilla extract. Stir until well blended. If you must, you can gently warm the liquid mixture on the stovetop or in the microwave, but make sure it's close to room temperature before you pour it into the dry mixture (this is especially important if using chocolate, since it will melt).
  • Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. This takes some arm muscles, but you can do it! If the mixture was easy to mix together, that's a sign that you need to add some more oats-sprinkle in more oats until you can't incorporate any more.
  • Transfer the mixture to the prepared square baker. Use your spoon to arrange the mixture fairly evenly in the baker, then use the bottom of a flat, round surface (like a short, sturdy drinking glass) to pack the mixture down as firmly and evenly as possible.
  • Cover the baker and refrigerate for at least one hour, or preferably overnight. (The oats need time to soak up some of the moisture so they aren't sticky.) When you're ready to slice, lift the bars out of the baker by grabbing both pieces of parchment paper on opposite corners. Use a sharp knife to slice the bars into 4 even columns and 4 even rows.
  • Wrap individual bars in plastic wrap or parchment paper (if you store them all together, they will stick to one another). Bars keep well for several days at room temperature, a couple of weeks in the fridge, or several months in a freezer-safe bag in the freezer for best flavor.

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

3/4 cup butter softened
2 tablespoons powdered sugar
1 cup flour
1/2 cup seedless raspberry or strawberry jam
1/4 cup honey
2 tablespoons brown sugar packed
1 teaspoon vanilla
1 cup quick cooking rolled oats
1 cup granola (without dried fruit)
1 cup Fisher chopped pecans
1 cup semi sweet chocolate morsels

Steps:

  • Preheat oven to 350°F. In mixing bowl cream 1/2 cup butter and powdered sugar; stir in flour. With lightly floured fingers, pat dough into ungreased 9x9 inch pan. Bake 10 minutes. Remove; cool 10 minutes. Spread jam evenly over crust. Combine in a bowl remaining 1/4 cup melted butter, honey, brown sugar and vanilla. Stir in oats, granola, pecans, and chocolate. Pat firmly over jam layer. Bake 30 minutes or until golden brown. Cool; cut into squares. Yield: 16 bars

I found this recipe on one of our monthly Brown County REA newsletters. My husband and I eat a few of these bars each day. It's a basic recipe to which you can add any of your favorite flavors...coconut, chocolate or different flavored chips, nuts or dried fruits.

4 cups quick-cooking oats
1 cup packed brown sugar
1 cup chopped salted peanuts
1 cup semisweet chocolate chips
1/2 cup sunflower kernels
3/4 cup butter, melted
2/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, peanuts, chocolate chips and sunflower kernels. Stir in butter, honey and vanilla until combined (mixture will be crumbly). Press into a greased parchment-lined 15x10x1-in. baking pan., Bake 15-20 minutes or until browned and bubbly. Cool 15 minutes on a wire rack; cut into squares. Cool completely before removing from pan. Freeze option: Wrap each cooled bar in plastic; freeze until firm. To use, thaw bar at room temperature or, if desired, unwrap and place on a microwave-safe plate and microwave on high for 15-20 seconds or until heated through.

1 3/4 cups oats
1/4 cup bob's red mill wheat bran or 1/4 cup oat bran
3/4 cup walnuts, chopped
1/2 cup unsalted sunflower seeds
2 teaspoons avocado oil or 2 teaspoons any vegetable oil
1/3 cup honey, use a good quality
3 -4 drops sweetleaf stevia, to taste
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees, spray an 8 inch square baking pan with cooking spray and line with parchment paper. Spray again and set aside.
  • Place the oats, wheat bran, walnuts and sunflower seeds on a cooking sheet. Bake for about 10 to 12 minutes or until lightly toasted. Then set aside.
  • Place the honey in the microwave for about 15 seconds. Just to loosen up a little. . In a medium mixing bowl, add the honey, oil and vanilla along with the salt and SweetLeaf.
  • Add the toasted dry ingredients and mix gently to combine. Add in the dried cranberries.
  • Pour into baking pan and with wax paper, press the mixture to make sure you level out and covers the pan.
  • Bake for about 15 to 17 minutes. You will see the top will be lightly browned. Try not to over bake.
  • Place on a cooling rack. Let cool down at least 1 hour. Cut into 16 squares and enjoy!
