1 cup purchased julienne (matchstick-cut) carrots
3/4 cup uncooked wild rice
1 medium onion, chopped (1/2 cup)
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1 can (10 3/4 oz) reduced-sodium cream of celery soup
1/4 teaspoon pepper
3 cups water
1 cup half-and-half
1/4 cup sliced almonds
2 tablespoons dry sherry, if desired
1/4 cup chopped fresh parsley

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except half-and-half, almonds, sherry and parsley.
  • Cover; cook on Low heat setting 7 to 8 hours.
  • Stir in remaining ingredients. Increase heat setting to High. Cover; cook 10 to 15 minutes longer or until hot.

1 chopped medium onion
1/2 cup flour
3 cups chicken broth
2 cups cooked wild rice(made from 1/2 cup raw wild rice)
2-3 medium carrots sliced thinly
1/2 cup cubed ham
1/2 teaspoon salt
1 cup half and half/OR heavy cream
Optional: 2 tablespoons dry sherry

Steps:

  • In a soup pot, melt butter and add the chopped onions and carrots. Saute until tender.
  • Blend in flour and gradually add broth. Cook, constantly stirring until the mixture comes to a boil. Let it boil for 1 minute.
  • Stir in the cooked rice, chopped ham, and salt. Simmer for 5 minutes.
  • Blend in half and half, and if you choose, sherry(or white wine or white vinegar). Heat the soup again to serving temperature.
  • Serve in bowls with crusty artisanal bread.

4 cups water
1/2 teaspoon salt
1/2 cup uncooked wild rice
3 tablespoons chopped green onions
1/4 cup shredded carrot
3 tablespoons chopped pecans
6 tablespoons butter, cubed
1/3 cup all-purpose flour
2 cans (14-1/2 ounces each) chicken broth
1/2 cup cubed fully cooked ham
1/4 teaspoon pepper
1 cup half-and-half cream
Green onion, cut into thin strips, optional

Steps:

  • In a large saucepan, bring water and salt to a boil. Add rice. Reduce heat; cover and simmer for 50-55 minutes or until tender. Remove from the heat. Let stand for 10 minutes; drain and set aside. , In a large Dutch oven or soup kettle, saute the onions, carrot and pecans in butter for 1-2 minutes. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the ham, pepper and wild rice. Cover and simmer for 5 minutes or until carrots are tender., Reduce heat. Add cream and heat through (do not boil). Sprinkle with green onion if desired.

1 tablespoon butter
1 onion, chopped
¼ cup all-purpose flour
1 quart chicken broth
2 large carrots, shredded
3 cups cubed cooked ham
½ cup milk
2 tablespoons chopped fresh parsley
¼ cup sweet vermouth

Steps:

  • In a medium saucepan, boil rice in water 30 minutes. Drain, rinse, and set aside.
  • Meanwhile, in a large soup pot, melt butter over medium heat. Cook onion in butter until translucent. Stir in flour all at once to form a roux. Stir in broth, a little at a time, and cook until slightly thickened. Stir in carrots, ham, milk, parsley and reserved rice. Reduce heat and simmer 15 minutes.

1 4oz box of wild rice (I used Rice-a-Roni long grain & wild rice)
3/4 cup shredded carrots

2 cups milk

Salt and pepper to taste
Sliced almonds

Steps:

  • Saute onion in butter in a large pot till tender. Whisk in flour and cook for 1 minute.
  • Add chicken broth and rice mix, including seasoning packet. Simmer for 15 minutes, stirring occasionally, till rice is tender.

This creamy ham and wild rice soup is perfect for cold nights and hungry bellies.

6 tablespoons Butter
1 Medium Onion (finely diced)
2 Medium Carrots (diced (about ¾ - 1 cup diced))
1 Celery Rib (diced (about ¼ cup diced))
3-4 Garlic Cloves (minced)
2 teaspoons Minced Sage (about 4 leaves)
¼ teaspoon Black Pepper
⅓ cup All Purpose Flour
6 cups Chicken Broth
12 ounces Ham (cut into bite sized cubes)
2 cups Cooked Wild Rice Mix (we used a mix of wild and white rice prepared to package directions)
½ cup Half and Half
Salt (if needed at the end)

Steps:

  • Melt the butter in a large pot over medium heat. When the butter has melted and starts to foam, add the onions, carrots and celery.
  • Cook the vegetables gently for 5 minutes until the onions become translucent and start to soften, stir frequently.
  • Add the garlic, sage and black pepper to the pot, cook for 1 minute, stirring frequently.
  • Add the flour, stirring constantly until well incorporated. Cook the mixture for 2-3 minutes, stirring almost constantly to cook out the flour taste.
  • Slowly add in the chicken broth while stirring until it is incorporated. Use a whisk to make it easier to dissolve the flour. If you don't have one, stir vigorously with a wooden spoon.
  • Raise the heat to medium-high and bring the broth to a simmer (it will take about 5 minutes).
  • Next, add the ham and let the soup come back to a simmer.
  • Then, lower the heat to medium-low, half-cover the pot and continue simmering for 15 minutes, stir occasionally. Keep the soup at a simmer raise or lower the heat if necessary.
  • Add the rice, half cover and continue cooking for 5 minutes. Stir often to make sure the rice is not sticking to the bottom of the pot.
  • Take the pot off the heat and add the half and half, stir to combine.
  • Return the pot to low heat and warm through, do not let the soup come to a simmer or boil.
  • Taste and add salt, if needed. As a reference we did not add extra to ours.

1/2 cup uncooked wild rice
1-1/2 Tbsp butter
1 small onion, chopped
4 cups milk
2 cups water
2 cans cream of potato soup
1 pound Velveeta Cheese
1 cup diced ham

Steps:

  • Wash wild rice -put about 3 cups of water in a saucepan, and being to a boil- turn down heat and add wild rice and cover. Keep at a slow boil for about an hour until rice is puffed up.
  • While rice is cooking, put butter in a large pot and saute chopped onion. Add the milk, water, and cream of potato soup. When this is hot add Velveeta Cheese in thin slices. When cheese is melted, add the ham.
  • When the rice is done, drain and add to the soup. Stir awhile and serve.

1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook rice according to directions on package, spread over bottom of greased 13 x 9 2 inch baking dish.
  • Layer broccoli over rice. Sprinkle ham over broccoli, then cover with cheddar cheese.
  • Combine soup, mayonnaise and mustard, spread over casserole.

Steps:

  • In a pot, bring the wild rice and water to a boil. Reduce heat to low, cover, and simmer 45 minutes.
  • In a separate pot, melt the butter over medium heat, and saute the onion until tender. Blend in the flour until smooth, and gradually stir in the chicken broth. Stirring constantly, bring the mixture to a boil. Reduce heat to low, and mix in the cooked rice, ham, carrots, and almonds. Continue to cook and stir about 5 minutes, until heated through. Thoroughly blend the half and half into the soup just before serving.
