1/4 cup sherry vinegar
2 tablespoons chopped shallots
Kosher salt and freshly ground black pepper
3/4 cup extra-virgin olive oil

Steps:

  • Whisk together the vinegar, shallots and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple turns of freshly ground black pepper.

6 eggs
1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

Steps:

  • Place 6 eggs in a medium saucepan with enough cold water to cover. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

2-1/2 cups torn fresh spinach
1 green onion, chopped
1 radish, chopped
Dash salt
Dash pepper
2 bacon strips, diced
1 tablespoon sugar
1 tablespoon cider vinegar
1-1/2 teaspoons lemon juice
1/2 teaspoon cornstarch
2 tablespoons water
1 hard-boiled large egg, chopped

Steps:

  • In a salad bowl, combine the spinach, onion, radish, salt and pepper; set aside. , In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1 tablespoon drippings. Combine the sugar, vinegar and lemon juice; stir into drippings. Cook and stir over low heat until sugar is dissolved. Combine cornstarch and water until smooth; add to skillet. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. , Pour over spinach mixture and toss to coat. Top with bacon and egg.

1 large shallot, very thinly sliced (about 1/2 cup)
3 tablespoons sherry vinegar
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper
5 tablespoons extra-virgin olive oil
12 cups mixed greens (such as red-leaf, green-leaf, and Little Gem) torn into bite-size pieces
1 cup thinly sliced watermelon radishes (from 3 small)
1 cup thinly sliced carrots (from 2 to 3 small)
Edible nasturtiums (optional)

Steps:

  • Cover shallot with vinegar; let stand 10 minutes. Transfer 2 tablespoons of liquid to a large bowl, then drain. Add mustard to vinegar in bowl; whisk to combine. Season with salt and pepper, then slowly whisk in oil until thick and creamy.
  • Add greens, radishes, carrots, pickled shallot, and nasturtiums to bowl and toss to combine; serve immediately.

3 tablespoons sherry wine vinegar
1 tablespoon Dijon mustard
1 teaspoon coarse salt
1/2 teaspoon fresh ground black pepper
1/3 cup extra virgin olive oil
2 bunches spinach, stems removed, washed, dried
10 pickled shallots
1/2 cup pumpkin seeds, toasted
1/2 cup crumbled feta cheese (or anejo cheese) (optional)

Steps:

  • In a small bowl, whisk vinegar, mustard, salt, pepper, and olive oil together.
  • Just before serving, place all ingredients foro the salad on the counter. Turn on stovetop burner to medium high.
  • Set a large stainless steel bowl over the burner and heat until very hot. Using an oven mitt or pot holder to protect your hands, pour the vinaigrette into the bowl and swirl for a minute or two, until the vinaigrette is hot. Quickly throw in the spinach and shallots and toss salad with tongs to coat evenly. When the spinach begins to wilt, remove from heat and move to serving plates.
  • Sprinkle with toasted pumpkin seeds and cheese if desired. Serve immediately. Enjoy!

1/2 cup thinly sliced shallot
1/3 cup sherry wine vinegar or 1/3 cup red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons sliced almonds
1/4 teaspoon smoked paprika (optional) or 1/4 teaspoon hot paprika (optional)
1/3 cup reduced-sodium vegetable broth or 1/3 cup chicken broth
1/4 cup chopped black olives, such as Kalamata

Steps:

  • Place spinach in a large bowl.
  • Place shallot, vinegar and oil in a large skillet over medium heat.
  • Cook, stirring often, until the liquid is nearly evaporated.

4 large shallots, minced
Coarse salt and ground pepper
1 tablespoon water
1 teaspoon whole-grain mustard
2 teaspoons red wine vinegar
2 bags (10 ounces each) baby spinach
1 teaspoon vinegar

Steps:

  • In a large skillet, heat extra-virgin olive oil over medium-high. Add minced shallots, and cook, stirring often, until softened, about 3 minutes. Season with coarse salt and pepper. Reduce heat to medium-low and cook, stirring, until shallots are sticky and browned, about 8 minutes. Add water and cook, stirring and scraping up browned bits from skillet, until shallots are dark brown, 3 to 5 minutes. Remove skillet from heat; add whole-grain mustard and red wine vinegar and stir to combine. In a large bowl, place 2 bags (10 ounces each) baby spinach and pour warm dressing over top. Add 1 teaspoon vinegar, toss, and season with salt and pepper.
