WINTER CHILI CORNBREAD PIZZA

1 clove garlic, minced
1 poblano pepper, steamed, seeded and chopped
1 small head cauliflower, cut into small florets
2 cups chopped portobello mushrooms
1 tablespoon chili powder
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
Large pinch crushed red pepper flakes
One 15-ounce can black beans
One 10-ounce can fire-roasted diced tomatoes and green chilies
One 10-ounce can fire-roasted diced tomatoes and green chilies
2 tablespoons BBQ sauce
Splash of hot sauce
Vegetable broth or water, as needed
1 tablespoon canola oil
1 cup stone-ground yellow cornmeal
3/4 cup all-purpose flour
2 teaspoons sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 large eggs, lightly beaten
3/4 cup buttermilk
6 tablespoons unsalted butter, melted and cooled
3/4 cup grated sharp Cheddar
Sliced jalapenos, for serving
Sour cream, for serving
Fresh cilantro, for serving

Steps:

  • For the chili: Preheat the oven to 500 degrees F.
  • Toss together the garlic, poblano, cauliflower, mushrooms, salt, chili powder, olive oil, cinnamon, coriander, cumin and red pepper flakes on a rimmed sheet tray in a single layer. Roast the vegetables until browned and tender, 10 to 12 minutes.
  • Carefully transfer the vegetables to a large pot and stir in the beans, tomatoes, BBQ sauce and hot sauce. Bring the mixture to a boil, stirring occasionally, then reduce the heat to medium low and simmer until the desired thickness, about 20 minutes total. Add a bit of broth or water for a looser chili.
  • For the pizza: Reduce the oven to 425 degrees F. Grease a rimmed half-sheet tray with the canola oil.
  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt. Whisk in the eggs, buttermilk and melted butter until combined.
  • Pour the batter onto the prepared sheet tray. Transfer to the oven and bake until the top is light brown, 6 to 8 minutes. Remove the pizza from the oven and top with the chili and Cheddar, leaving a 1/2-inch border around the crust. Bake until the cornbread is done and the cheese is melted, about 10 more minutes.
  • Allow the pizza to cool slightly before slicing and serving. Top with jalapenos, sour cream and cilantro as desired.

1 (8.5 ounce) package cornbread mix (such as Jiffy®)
1 egg
⅓ cup milk
1 pound chicken breasts, cut into bite-sized pieces
⅓ cup water
½ (1 ounce) envelope taco seasoning mix
¼ cup barbecue sauce
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Combine cornbread mix, egg, and milk in a bowl. Stir until moistened. Pour into the prepared pan.
  • Bake in the preheated oven until just set, 6 to 8 minutes.
  • While cornbread is baking, cook and stir chicken in a nonstick skillet over medium-high heat until browned, 4 to 5 minutes. Stir in water and taco seasoning. Simmer for 2 minutes.
  • Remove cornbread from the oven and carefully spread barbecue sauce over the soft surface. Gently lay the chicken over the barbecue sauce. Sprinkle Cheddar cheese over the chicken.
  • Continue baking until melted and browned, about 15 minutes. Let sit for 5 minutes. Cut into individual pieces.

This is a quick meal and sort of like a pizza made with a corn bread crust. It makes two and is yummy. It makes a good Sunday night meal or great for the sports fan to munch on while cheering for their favorite team. This is a good recipe to use any Chili you have made and put in the freezer or you can use the canned.

1 tablespoon vegetable oil
1 (11 ounce) can corn niblets (or Mexican-style corn, drained )
2 (9 ounce) packages corn muffin mix
2/3 cup milk
2 eggs (lightly beaten)
1 3/4 cups homemade chili (or a 15-ounce can of chili)
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1/2 cup thinly sliced green onion (use tops too)
1/2 cup sliced drained pitted ripe olives
sour cream (optional)

Steps:

  • CORN BREAD CRUST:.
  • Coat two 10-inch round baking pans lightly with oil and line bottoms with cooking parchment.
  • Combine the muffin mix, corn, milk, and eggs in a large mixing bowl; mix well.
  • Spoon half of batter into each of the pans.
  • Bake for 20 min; cool in pans on wire rack for 10 minutes.
  • Invert each crust onto a serving platter.
  • FILLING:.
  • Heat the Chili in a saucepan over medium heat till hot.
  • Spread the Chili evenly over the prepared crusts.
  • Sprinkle with cheddar cheese, Monterey Jack cheese, green onions, and ripe olives.
  • Garnish with sour cream.
  • Cut into 8 wedges.

After looking over several different chili recipes, I created my own.... and it was a hit! Enjoy on a cold day with cornbread and honey-butter!

1 lb ground beef or 1 lb ground turkey
1 large onion, chopped
2 crushed garlic cloves
1 (25 ounce) can tomato sauce
1 (25 ounce) can crushed tomatoes
1 (25 ounce) can red kidney beans
16 ounces beef broth
1 green bell pepper
3 celery ribs, chopped
1 teaspoon cumin
1 teaspoon paprika
2 tablespoons chili powder
1 teaspoon oregano
1 tablespoon dried basil
1 teaspoon salt
pepper
1 teaspoon Worcestershire sauce

Steps:

  • Brown ground beef adding onion and garlic towards the end of browning over medium heat.
  • Add everything else.
  • Let it cook and stew for at least an hour -- preferably longer.
  • I like to make it in the crockpot and let it cook all day long.
  • And it is even better the next day!

1 (8 ounce) package cornbread-muffin mix
1/3 cup nonfat milk
1 egg, beaten
1 cup frozen corn, thawed
3/4 lb ground turkey
1 small onion, chopped
1 small sweet red pepper, chopped
1 (1 1/4 ounce) packet reduced-sodium taco seasoning mix
1/2 cup water
1 cup reduced-fat Mexican cheese blend
1 small tomatoes, chopped
1/4 cup sliced ripe olives
2 green onions, chopped
6 tablespoons reduced-fat sour cream

Steps:

  • In a small bowl, combine the corn bread mix, milk and egg. Stir in corn just until blended. Spread evenly into a 8X8 or 9X9 pan. Bake at 400°F for 14-18 minutes or until a toothpick inserted near the center comes out clean.
  • Meanwhile, in a large skillet, cook the turkey, onion, red pepper over medium heat until meat is no longer pink. Drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • Spoon turkey mixture over corn bread; sprinkle with cheese. Bake for 5-10 minutes or until the cheese is melted. Sprinkle with tomato, olives and green onions. Cut into six wedges; top each with sour cream.

2 (8 1/2 ounce) boxes corn muffin mix (Jiffy)
2 eggs
4 tablespoons butter (melted)
1 1/2 cups milk
1 cup frozen corn
extra virgin olive oil
2 tablespoons extra virgin olive oil
1 lb ground beef
1 small onion, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon cayenne pepper sauce
2 1/2 cups monterey jack cheese
1/2 red bell pepper
2 tablespoons green olives, sliced
1 cup salsa
2 tomatoes, chopped and seeded
2 scallions, chopped

Steps:

  • Mix together 2 packages muffin mix with 2 eggs, 4 T melted butter 1 1/2 cup milk and corn. Wipe non stick skillet with a little olived oil and pour in muffin mix. (I used 9 by 13 pan) Place pan in oven and bake at 400 degrees for 12 to 15 minutes or until browned. While the cornbread is cooking brown the beef in a little olive oil. Add onions and spices and cook meat for 5 minutes longer. Remove cornbread from oven and top with meat, cheese and veggies. Add pan back to oven and cook 5 more minutes or till cheese is melted. Cut and serve with salsa.
