Nothing beats them for home-cooked comfort and making the kids or weekend guests feel special.

2 cups flour
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
2 eggs (divided)
1 ⅔ cup milk
⅓ cup melted butter (or oil)

Steps:

  • Preheat the waffle iron according to the manufacturer's directions.
  • Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
  • In a small bowl, mix egg yolks, milk, and butter. Set aside.
  • In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
  • Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
  • Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

Wonderful Waffles image

I've tried other waffle recipes, and this is one is by far the best! The texture is moist, not dry - and they freeze well. Cool on wire racks before freezing, then just pop them in the toaster to reheat.

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup butter
¼ cup brown sugar
3 egg yolks
2 cups buttermilk
3 egg whites

Steps:

  • Preheat waffle iron. In a medium bowl, sift together flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks. Blend in flour mixture alternately with buttermilk.
  • In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Spray waffle iron with non-stick cooking spray, or lightly brush with oil. Ladle the batter onto preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

I've used this recipe since 1980 - definitely the best waffle recipe there is. To get them to the table faster, I always bake in conventional waffle iron at the same time as in a pancake maker - both variants are equally successful and popular.

500 ml flour
10 -15 ml baking powder
5 ml salt
12 1/2 ml sugar
3 eggs, separated
430 ml milk
80 ml salad oil or 80 ml melted butter

Steps:

  • Sift together the dry ingredients. Set aside.
  • Beat egg white until stiff, but not dry. Set aside.
  • Beat egg yolks until thick and creamy.
  • Beat in milk slowly, then the oil or butter and beat well.
  • Add dry ingredients, beating all the time.
  • Gradually fold in the egg whites.
  • Heat waffle iron and spray lightly with cooking spray. pour in batter and cook until golden brown and done. Serve with honey or maple syrup, and ice-cream, whipped cream or creme fraiche.

1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
