TRADITIONAL MEXICAN WEDDING COOKIES

My mom and I have been baking these for as long as I can remember. They are delectable butter-type cookies served as favors at traditional Mexican weddings. They also make a wonderful addition to any Christmas goodie platter.

Ingredients

1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups sifted flour
1/4 teaspoon salt
3/4 cup chopped walnuts or 3/4 cup pecans
powdered sugar (for rolling baked cookies in)

Steps:

Cream together butter and powdered sugar until light and fluffy; stir in vanilla.
Whisk together flour and salt; add gradually to butter mixture; stir in chopped nuts.
Chill dough if it seems too soft.
Form dough into 1 1/4" balls and place onto parchment-lined or ungreased baking sheets.
Bake at 400° for 10-12 minutes or just until the cookies start to turn light golden-brown; remove from oven and allow to cool slightly; while cookies are still warm (but NOT hot) remove them from baking sheets and roll, a few at a time, in powdered sugar until evenly coated; cool cookies completely on wire racks.
Cookies may (optionally) be rolled in powdered sugar a second time once cooled to room temperature.
NOTE: Forming dough into 1" balls will increase yield to 48 cookies.

3 1/2 cups all-purpose flour, plus some for dusting
1/2 teaspoon salt
2 teaspoon baking powder
2 sticks unsalted butter, room temperature
1 1/2 cups granulated sugar
2 extra-large eggs
1 1/2 teaspoons vanilla extract
Royal icing, fondant, or cookie glaze, for decorating

Steps:

Preheat oven to 350 degrees F.
In a medium bowl, whisk together flour, salt, and baking powder. In a large mixing bowl, combine the butter and sugar with a hand mixer until fluffy, about 2 minutes. Add the eggs, 1 at a time. Add the vanilla and mix well. Add the flour mixture and mix with a spatula until a ball of dough forms. Transfer dough to a well floured work surface and cut in half. Place waxed paper over half of the dough and roll out to about 1/4-inch thick. Transfer the other half of the dough to the refrigerator to keep cold until ready to use. Using cookie cutters, cut the dough into various shapes and put on a parchment lined cookie sheet. Repeat with the other half of the dough. Bake for 11 to 13 minutes. Leave on the cookie sheet to cool. Decorate with royal icing, fondant, or cookie glaze.

This is a recipe that I came up with over Christmas this year. If you like those wedding cookies (in the pink box) you will love this cookie!

Ingredients

3/4 cup pecans
1 pinch cinnamon
1 cup salted butter (softened and cut into pieces)
1 teaspoon vanilla
1 teaspoon coconut extract
3/4 cup powdered sugar
2 cups all-purpose flour
2/3 cup mini chocolate chip

Steps:

In a food processor, process pecans, cinnamon and powdered sugar until fine crumbs form.
Add in butter pieces then vanilla and coconut extracts. Scrape the bowl at least once to blend well.
Add flour using the pulse action on food processor until everything sticks together.
Fold in the chocolate chips.
NOTE: (If you do not have a food processor, buy fine chopped pecan pieces and use a pastry blender).
Refrigerate for 2 hours wrapped in plastic.
Remove from frig and roll into 1/2 inch balls. Place cookies on a cookie sheet and bake at 375°F for 12-15 minutes. Cool for 5 minutes and roll cookies in a pie plate filled with powdered sugar. Finish by cooling on a rack.
Hint: Cookies will not expand much in the oven. So, really load up that cookie sheet.
