WHOLE WHEAT BROWNIES



Whole Wheat Brownies image

A double dose of chocolate in these whole wheat brownies.

4 (1 ounce) squares semisweet chocolate
½ cup butter
1 cup white sugar
2 each eggs
1 teaspoon vanilla extract
¼ teaspoon salt
1 cup whole wheat flour
1 cup dark chocolate chips
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Place chocolate and butter in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from the heat and set aside to cool for 5 minutes.
  • Combine sugar, eggs, vanilla extract, and salt in a large bowl; beat with an electric mixer until smooth and creamy. Stir in the cooled melted chocolate until incorporated. Fold in flour and then stir in chocolate chips and walnuts. Pour batter into the prepared baking pan and spread evenly.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 28 minutes. Let cool completely before cutting into bars.

Wuollet's Brownie Enormous - Minnesota Brownies image

A truly delicious brownie recipe from the Woullet Bakeries (several locations in and around the Twin Cities area). They are called 'enourmous' because this recipe (fits in a 9x13" pan) makes FOUR servings. That's absurd. Feel free to add whatever floats your boat; I left out the walnuts entirely and upped the chocolate chunks (I used one cadbury dark chocolate bar and a few chunks of a cadbury milk chocolate bar). This recipe is available on the Woullet website as well as the food network website. **edit** I was in Minneapolis earlier this month and I went to Wuollet's! YUM! They are really delicious, but they aren't as gigantic as they say they are. If you go when they're about to close it's 2 for 1...worth it!

3/4 cup melted butter (1 1/2 sticks, 12 T)
4 squares baking chocolate (unsweetened, 4 oz)
2 cups sugar (white, granulated)
3 large eggs
1 teaspoon vanilla
1 cup flour
1 cup chunks of premium-grade bar chocolate
mixed with* large walnut pieces

Steps:

  • Preheat oven to 350 degrees F.
  • Microwave butter and chocolate (in a pyrex bowl large enough to mix the rest of the ingredients or use a small bowl) on high for about 2 minutes or until melted. Stir occasionally.
  • Add each remaining ingredient into the same large bowl (or pour the contents of the small bowl into a mixer), stirring after each addition.
  • Gently fold in the walnuts and chunks of chocolate.
  • Pour** into a 9 by 13-inch buttered baking dish (I lined mine with parchment paper) and bake for 30 to 35 minutes, until toothpick inserted in center comes out with fudgy crumbs.
  • Do not overbake!
  • *Note - this should be a total of 1 cup of chocolate and walnuts, but you can always add a little more to suit your tastes.
  • **Note - the batter is very thick**.

  • Preheat oven to 350 degrees F. Microwave butter and chocolate on high about 2 minutes until melted. Add each remaining ingredient, stirring after each addition. Gently fold in the walnuts and chunks of chocolate. Pour into a 9- by 13-inch buttered baking dish and bake for 30 to 35 minutes, until toothpick inserted in center comes out with fudgy crumbs. 1/4 cup butter or margarine
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
4 cups Betty Crocker™ chopped walnuts
1 box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and egg called for on brownie mix box

Steps:

  • Heat oven to 350° F. Grease bottom and sides of 13 x 9-inch pan with shortening or cooking spray. In 2-quart saucepan, heat brown sugar and butter over low heat, stirring occasionally, until butter is melted; cool slightly. Stir in flour, vanilla and 1 egg until blended. Stir in walnuts; set aside.
  • Make brownie batter as directed on box. Spread in pan. Spoon topping evenly over batter.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out almost clean. Cool completely in pan on cooling rack. For brownies, cut into 8 rows by 4 rows.

1/4 cup shortening
3 tablespoons baking cocoa
1 egg
1/2 cup sugar
1/4 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 cup chopped walnuts

Steps:

  • In a small bowl, cream shortening and cocoa; beat in egg, sugar and vanilla. Combine dry ingredients; gradually add to creamed mixture. Beat on low speed until thoroughly combined. Stir in walnuts. , Pour into a greased 8x4-in. loaf pan. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean.
