SPINACH ARTICHOKE PASTA SALAD



Spinach Artichoke Pasta Salad image

Coarse salt
1 package fresh mushroom or chicken prosciutto or spinach filled tortellini (recommended: Contadina or Buitoni brands) available on dairy aisle in most markets
1/2 pound fresh baby spinach
1 (15-ounce) can baby artichoke hearts in water, drained and chopped
1 red roasted pepper, drained and chopped
1/2 small red onion, chopped
1 clove garlic, cracked from skin
1 lemon, zested
2 teaspoons lemon juice, the juice of 1 wedge
2 tablespoons red wine vinegar, a couple of splashes
1/4 cup extra-virgin olive oil
1 tablespoon fresh thyme leaves, chopped or 1/2 teaspoon dried leaves, eyeball it
Black pepper
A handful sun-dried tomatoes packed in oil, coarsely chopped

Steps:

  • Bring 5 or 6 inches of water to a boil in a large pot. Salt boiling water and add pasta. Cook for 3 to 4 minutes, until pasta is just tender and the tortellini are floating like buoys. Drain tortellini, then cool the cooked pasta by spreading them out on a large plate or a cookie sheet in a single layer.
  • Coarsely chop baby spinach. Combine with artichoke pieces, roasted red pepper and red onion. Chop garlic, then add salt to it and mash it into a paste with the flat of your knife. Transfer garlic paste to a small bowl and add lemon zest, lemon juice and vinegar to it. Whisk in oil, thyme and pepper. Add pasta and sun-dried tomatoes to the salad. Dress salad and gently toss. Serve or refrigerate.

3 tablespoons extra-virgin olive oil, 3 turns of the pan
1 large shallot, chopped
2 tablespoons rice wine vinegar, a couple of splashes
1 tablespoon soy sauce, eyeball it
1/4 cup Chinese duck or plum sauce, eyeball it
A few dashes hot sauce
1 1/2 pounds triple washed spinach, coarsely chopped
Salt and pepper
1 tablespoon toasted sesame seeds, available on International foods aisle

Steps:

  • Heat the extra-virgin olive oil, 3 turns of the pan, in a deep skillet over medium heat. Add shallots to hot oil and saute them for 2 minutes. Add vinegar and soy and whisk into duck sauce. Reduce heat to low. Add hot sauce to dressing and pile in half the spinach. Turn spinach carefully with tongs. When it wilts down, 2 minutes, add the remaining greens and wilt. Season the warm salad with salt and pepper to your taste. Serve the spinach with toasted sesame seeds sprinkled over top.

4 slices pumpernickel bread
1/3 lb havarti with caraway, thinly sliced
1 vine-ripe tomatoes, thinly sliced
3 -5 blades fresh chives (snipped or chopped)
4 slices whole wheat bread
1/3 lb sharp cheddar cheese, thinly sliced
8 thin slices baked ham
1 small mcintosh apple, thinly sliced
4 slices crusty white bread
1/3 lb gruyere, thinly sliced
1 cup baby spinach leaves, from bulk bin of produce department
2 water-packed artichoke hearts, drained and sliced (Reserve the remainder of a small can for a salad topper later in the week)

Steps:

  • Heat a nonstick griddle pan over medium high heat.
  • Wipe grill with butter nestled in paper towel.
  • Add 4 slices bread.
  • Cover bread with thin slices of cheese.
  • Cover pumpernickel and Havarti grilled cheese with sliced tomato and chives.
  • Cover cheddar and whole wheat grilled cheese with 2 slices of ham per sandwich and some sliced apple.
  • Cover the crusty white bread-and-Gruyere sandwiches with spinach leaves and thinly sliced artichokes seasoned with salt and pepper.
  • Make 2 sandwiches at a time and transfer to a warm plate in low oven.
  • Cut sandwiches corner to corner and serve a platter of mixed grilled sandwiches with your homemade soup.
