2 RIPE medium bananas ( 0 Points)
1 1⁄2 cup uncooked old fashioned oats (13 Points)
5 Tbsp PB2 Powdered peanut butter (3 Points)
1⁄4 cup semisweet chocolate chips (11 Points)
1/2 cup water (o points)
5 sprays Cooking spray ( 0 points)

Steps:

  • Preheat the oven to 350 degrees
  • Mix all the ingredients together
  • Spray cookie sheet.
  • Roll spoonful sizes of the mixture into 20 balls and place them evenly on the cookie sheet.
  • Bake 13 to 15 minutes

Steps:

  • Pre-heat oven 425.
  • Mix ingredients and drop onto lightly sprayed cookie sheet.
  • Bake for 13-16 minutes.

Blueberry Breakfast Biscuits - 1 Point image

These aren't really biscuits, but they do make a nice low point breakfast treat. If you are expecting a traditional baking powder biscuit, this is the the recipe you want. The oatmeal gives the biscuits a nuttier flavor and they end up tasting more like a blueberry muffin than a biscuit. The batter is rather runny, so I recommend you use a cookie scoop when putting them on the baking sheet. I was given this recipe by a friend in WWs. These are 1 point per biscuit.

2 cups oatmeal
3 tablespoons Splenda sugar substitute
1 tablespoon baking powder
2 tablespoons unsalted butter
1 cup buttermilk
1 1/2 cups frozen blueberries

Steps:

  • Preheat oven to 400.
  • Grind the oatmeal into a flour using your food processor.
  • Combine the oatmeal, Splenda and baking powder.
  • Cut in butter with a pastry cutter until it resembles a course meal.
  • Stir in buttermilk.
  • Fold in blueberries.
  • Place mixture into 13 mounds on a parchment lined baking pan.
  • Bake 20 to 25 minutes.
  • I like to serve with a little wild honey (counting the points of course).

  • Preheat oven to 450°F. Place flour and yogurt in a medium bowl; stir well with a wooden spoon until just combined and then keep mixing dough in bowl with your hands until smooth (about 2 minutes of kneading). If dough is too sticky to knead, add more flour, 1 Tbsp at a time, until no longer sticky.
  • Turn dough out onto a lightly floured sheet of parchment paper. Roll dough to a ½-inch thickness. Cut with a 2-inch biscuit cutter into 24 biscuits, rerolling scraps as needed. Arrange biscuits 1 inch apart on a large baking sheet lined with parchment paper. Brush about half of butter over tops of biscuits.
  • Bake at 450°F until lightly browned and done, 10-12 minutes. Brush remaining butter over tops of biscuits. Serve warm.
