7 ounces sweetcorn
1/2 medium red pepper
4 scallions
1/2 lime, juice of
1 tablespoon fresh cilantro, chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 garlic clove
1/2 teaspoon salt
1 lettuce

Steps:

  • In a medium bowl, mix the beans, corn, pepper, scallions, cilantro, lime juice, oil, cumin, garlic and salt.
  • Refrigerate, covered, until the flavours are blended, at least 1 hour.
  • Place a lettuce leaf on a work surface and fill with about 2 tbsps of the bean mixture; fold up burrito-style.
  • Repeat, using all the bean mixture.

Steps:

  • Combine beans, and dressing, tossing gently; cover and chill overnight.
  • Drain beans; arrange in bunches of 10-12.
  • Wrap a half slice of bacon around each bunch, and secure with a toothpick.
  • Broil bundles 5 inches from heat about 7 minutes until bacon is cooked.

  • Blanch beans in water for 3 minutes, drain. Plunge in ice water, drain. Divide beans into 4 groups. Wrap with bacon slice, secure with toothpick. Arrange in baking dish. Combine sugar and butter and garlic and mix. Drizzle over beans and bake at 350 for 30 minutes.

1 lb green beans
8 -10 slices bacon, cut in half
French dressing

Steps:

  • Place 7-8 green beans into a bundle and wrap with half slice bacon.
  • Secure ends with toothpick.
  • Place bundles in baking dish and pour dressing over to marinate.
  • Cover and refrigerate overnight.
  • Bake in 350 degree oven until bacon is cooked.
  • Serve warm.

This recipe comes from a book by Rebecca Rather titled the Pastry Queen Christmas. It is an excellent appetizer or side dish and has been a hit every time I serve it.

1 1/2 lbs green beans, trimmed
1/2 cup unsalted butter
1/2 teaspoon dry mustard
1 teaspoon brown sugar, packed
2 garlic cloves, minced
1/4 teaspoon kosher salt
8 ounces bacon

Steps:

  • Fill a large saucepan with water and bring it to a boil over high heat.
  • Wash and trim the beans.
  • Add the beans to the boiling water and blanch for 3 to 4 minutes, until the beans are pliable but still crunchy.
  • Drain the beans and run them under cold water. Pat dry with paper towels or a clean dish towel and place them in a shallow ovenproof casserole.
  • In a medium saucepan, melt the butter over medium heat.
  • Stir in the dry mustard, brown sugar, garlic and salt.
  • Pour the butter mixture over the green beans, cover and refrigerate for at least 4 hours or overnight.
  • Preheat the oven to 375 degrees.
  • Make a bundle of 8 or 9 beans, wrap half a bacon slice around each bundle, securing with a toothpick, and arrange in a single layer in the same casserole used for marinating.
  • Bake, uncovered, for 45 minutes or until the bacon is cooked and the beans look wrinkled.
