Given to me by a friend who loves to experiment with recipes. A little kick of Southwestern cooking. Not too spicy, but can be made so with a little bit more jalapeno or other spices for an extra bit of 'kick.'

2 teaspoons ground cinnamon
2 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
1 whole chicken, cut into pieces
1 cup chicken broth
2 tablespoons honey
2 limes, juiced
½ jalapeno pepper, minced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
  • In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
  • Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

Weight Watchers Healthy Jalapeno Chicken Recipe. Only 251 calories and ready in 35 minutes. 4 WW Freestyle Points and 5 Smart Points.

¼ cup honey
⅓ cup fresh lime juice
2 tbsp soy sauce
2 tbsp fresh cilantro
3 jalapeno peppers (halved & seeded)
¼ tsp salt
¼ tsp pepper
3 cloves garlic (chopped)
6 6 oz skinless chicken breast ((bone in))

Steps:

  • In a blender, add honey, lime juice, soy sauce, cilantro, jalapeno pepper, salt, pepper, and garlic. Process until blended and smooth.
  • Pour contents of the blender into a ziploc bag. Add chicken to the bag. Seal, place in the refrigerator and let marinate for a minimum of hour or up to 8 hours.
  • Preheat grill
  • Remove the chicken from ziploc and set aside the bag with marinade for later.
  • Coat grill rack with Pam cooking spray. Place the chicken on the grill rack. Cover and grill approx 12 minutes - baste with marinade every once in a while, flip chicken and grill an additional 12 minutes or until done.

I've had this recipe for years, so it's long been a family favorite. The jalapeno stuffing adds some spice to ordinary grilled chicken.

4 to 8 jalapeno peppers, seeded and chopped or 1 can (4 ounces) chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced fresh parsley or 1 tablespoon dried parsley flakes
6 to 10 garlic cloves, minced
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves (8 ounces each)
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon zest

Steps:

  • In a small bowl, combine the peppers, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. With fingers, carefully loosen skin from the chicken breasts; gently stuff pepper mixture under the skin of each chicken breast. , Place in a greased 13x9-in. baking dish. Combine the broth, pepper, lemon zest and remaining lemon juice; pour over chicken. Cover and refrigerate for at least 6 hours. , Drain and discard marinade. Place chicken skin side up on grill. Place chicken skin side up on grill. Grill, covered, over medium heat for 12-14 minutes. Turn and grill 12-14 minutes longer until a thermometer reads 170°.

Serve this spicy Southwestern-style dish with a large salad on the side. You could also toss some peppers, eggplant or zucchini onto the grill with the chicken.

2 tsp Olive oil
0.25 cup(s) Fresh lime juice
1 fl oz Tequila about 2 tbsp
4 medium clove(s) Garlic clove(s) minced
1 tsp Unpacked brown sugar
2 Tbsp Mineral water
0.5 tsp Table salt
1 medium Jalapeño pepper(s) seeded and diced
1 pound(s) Uncooked boneless skinless chicken breast(s) four 4-oz pieces

Steps:

  • Purée onion through to pepper in a blender until smooth. Marinate chicken breasts for at least 1 hour. They can be marinated for several hours, if desired.
  • Heat grill. Pat excess marinade off chicken and grill until cooked through, about 4 minutes per side.
  • Serve with a fresh garden salad.

  • Combine first 4 ingredients in a large heavy-duty, zip-top plastic bag.
  • Add chicken; seal bag, and shake until chicken is coated well.
  • Marinate in refrigerator 8 hours or overnight, turning bag occasionally.
  • Remove chicken from marinade, discarding marinade.
  • Coat grill rack with cooking spray, and place on grill over medium-hot coals (350-400 degrees).
  • Place chicken on rack; grill, covered, 5 minutes on each side or until done.

This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. 1/4 cup honey
2 tablespoons fresh cilantro leaves

  • Place first 8 ingredients in a blender; process until smooth (or chopped them fine).

  • Prepare grill.
  • Remove chicken from bag, reserving marinade.

2 tablespoons olive oil, divided
6 jalapeno peppers, or to taste, seeded and chopped
1 onion, chopped
1 pound chicken tenders, cut into bite-size pieces
¼ teaspoon chicken seasoning blend, or to taste
½ (10 ounce) can pina colada mix
1 cup sour cream
½ (12 fluid ounce) can or bottle bock beer

Steps:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat, and cook and stir the jalapeno peppers and onion until tender, about 8 minutes. Remove the vegetables from the skillet; add 1 tablespoon of olive oil to the hot skillet. Sprinkle the chicken tenders with chicken seasoning, and cook and stir in the olive oil until slightly golden brown and no longer pink inside, about 10 minutes. Transfer the chicken to a bowl.
  • Return the jalapeno peppers and onions to the skillet, and stir in the pina colada mix and sour cream. Bring the mixture just to a simmer, reduce heat, and simmer for 5 minutes; stir in the chicken, and mix in the bock beer. Simmer until the flavors have blended and the sauce has slightly thickened, 15 to 30 more minutes.

6 jalapeno peppers, seeded and finely chopped
1 pound bacon strips, cooked and crumbled
4 cups rotisserie chicken, shredded

Steps:

  • Preheat oven to 425°. Arrange Tater tots in an ungreased 13x9-in. baking dish. Bake, uncovered 15 minutes. , Meanwhile, in a large bowl, combine cream cheese, sour cream, jalapeno peppers, garlic salt and pepper.
