MOM'S SHEPHERD'S PIE



Mom's Shepherd's Pie image

This recipe is simple and affordable. It's made up of common ingredients from the pantry- ground beef, green beans, tomato sauce, potatoes and seasonings. I'm not sure where it came from, but I know there are many variations. This is Mom's! Try serving with cranberry sauce or other fruit of your choice.

9 potatoes - peeled and cubed
1 ½ pounds ground beef
1 (6 ounce) can tomato sauce
2 tablespoons chopped fresh parsley
1 dash Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper
2 (15 ounce) cans green beans, drained
2 tablespoons all-purpose flour
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes and water to cover in a large pot over high heat. Boil for 15 minutes. Meanwhile, brown the ground beef in a large skillet over medium high heat; drain excess fat.
  • To the ground beef, add the tomato sauce, parsley, Worcestershire sauce to taste, salt, ground black pepper and green beans. In a separate small bowl, mix the flour with the 3 tablespoons water and stir into the beef mixture.
  • Stir all together well. Drain the potatoes, mash and spread over the beef mixture Place 2 to 3 vent holes through the mashed potatoes.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes. Brush the milk over the potatoes for the last 5 minutes of baking.

1/4 cup nonfat sour cream
1 tablespoon reduced-calorie margarine
1/8 cup nonfat milk
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup onion, chopped
1 lb lean ground beef
1 (14 1/2 ounce) can French style green beans, drained
1 (14 1/2 ounce) can tomatoes with onion and garlic, chopped
1/4 cup beef broth (I use bouillon)
1/4 teaspoon salt
1/4 teaspoon black pepper
Wondra Flour

Steps:

  • Preheat oven to 375°F.
  • Place potatoes in a large saucepan and pour enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream, margarine and milk; mash until smooth, season to taste with salt and pepper. Set aside.
  • Meanwhile, brown hamburger and onions together in sauce pan. Drain fat.
  • Add can of tomatoes (do not drain) and beef broth. Bring to a boil.
  • Add enough Wondra to cover and boil until slightly thickened. Add salt and pepper.
  • Transfer beef mixture to a casserole dish.
  • Spread green beans over the top.
  • Spread mashed potatoes over the top of green beans.
  • Bake 40 minutes.

1 teaspoon dried thyme
1/2 teaspoon table salt
1/4 teaspoon black pepper
2 cups canned chicken broth, or beef broth

Steps:

  • Preheat oven to 400ºF. Place potatoes in a large saucepan and pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream and margarine; mash until smooth, season to taste with salt and set aside. Meanwhile, heat oil in a large skillet over medium-high heat. Add onion, carrots and celery; cook until soft, about 3 minutes. Add turkey and cook until browned, breaking up the meat as it cooks, about 5 minutes. Add flour, rosemary, thyme, salt and pepper; stir to coat. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes. Transfer turkey mixture to a 9-inch, deep-dish pie plate. Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake until potatoes are golden, about 30 minutes. Slice into 6 pieces and serve.

1 cup shredded Cheddar cheese, divided
⅛ cup milk
1 green onion, chopped
1 tablespoon salted butter
1 pound ground beef
2 tablespoons all-purpose flour
¼ teaspoon ground black pepper, or more to taste
1 (10.5 ounce) can condensed French onion soup
¼ cup water
1 cup frozen peas

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  • Mash potatoes and add 1/2 cup Cheddar cheese, milk, green onion, and butter. Stir until mixed well.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet with flour and pepper until browned and crumbly, 5 to 7 minutes. Stir in French onion soup and water.
  • Warm frozen peas in a small, microwave-safe bowl in the microwave for 1 minute. Stir peas into the beef and soup mixture.
