SUGAR FREE FIVE MINUTE MICROWAVE FUDGE

Sugar Free Five Minute Microwave Fudge image

Provided by Teresia

Categories     Dessert

Time 5m

Number Of Ingredients 6

1 cup THM or Lily's sugar free chocolate chips
5 tablespoons heavy whipping cream
4 tablespoons unsweetened almond milk* (replace this with all cream for keto)
1/4 cup Gentle Sweet or 1/4 cup powdered xylitol or erythritol PLUS 1/8th tsp powdered stevia
1/2 cup chopped walnuts (or pecans if you'd like) (divided 1/3 cup in the fudge and rest scattered on top)
1/4 tsp pure vanilla extract - optional!

Steps:

  • Prepare a pan.
  • I used a 3x7 silicon bread pan and sprayed it very lightly with oil for the fudge in the main pictures. I've also used a small 5x8 glass pan lined with plastic wrap and that works well too, just won't be as thick.
  • Place the chocolate chips, cream and milk together in a bowl (I used a 4 cup glass measuring cup) and microwave for 1 minute and check to see if the chips are melted just enough to whisk together easily.
  • Mine is ready in 1 minute but oven times may vary). If not put back in for another 15-30 seconds...don't overcook.
  • Whisk these together and add in the powdered sweetener and flavorings.
  • Stir in the nuts, pour into the prepared pan sprinkle remaining nuts on top if desired and chill well.

QUICK & DIRTY CHOCOLATE ORANGE MICROWAVE FUDGE

Quick & Dirty Chocolate Orange Microwave Fudge image

Another adaptation from my Eagle brand dessert cookbook. If you like chocolate candy with orange cream this is the recipe for you.

Provided by MadCatKim

Categories     Candy

Time 15m

Yield 2 lbs (approx.)

Number Of Ingredients 7

12 ounces milk chocolate chips
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract
6 ounces white chocolate chips
1 tablespoon orange extract
red food coloring
yellow food coloring

Steps:

  • Line an 8x8 inch pan with wax paper.
  • I tape it in to make it easier.
  • In a medium bowl combine milk chocolate chips, 2/3 can of sweetened condensed milk, and vanilla extract.
  • Microwave 45 seconds to 1 minute at a time, stirring in between heating.
  • Continue until smooth.
  • Spread ½ of the mixture evenly across the bottom of the pan.
  • Reserved other ½ of mixture.
  • Chill 10-15 minutes.
  • In a small bowl combine white chocolate chips, remaining sweetened condensed milk, and orange extract.
  • Microwave 45 seconds to 1 minute at a time, stirring in between heating.
  • Continue until smooth.
  • Stir in red and yellow food coloring until you achieve an orange color you like.
  • Spread the mixture evenly across the first chocolate layer.
  • Chill 10-15 minutes.
  • Reheat reserved chocolate mixture.
  • Spread the mixture evenly across the orange layer.
  • Chill for an hour.
  • Remove from pan and cut into squares.
  • Tips: I always use Eagle Brand sweetened condensed milk.
  • It costs about twice as much but I've often been disappointed with the consistency of cheaper brands.

MICROWAVE FUDGE

Microwave Fudge image

Not only is this the easiest fudge to make, it's also the best tasting...well, at least in my opinion. The problem with a lot of fudge recipes is the need for cooking on the stove and a candy thermometer. This is so easy you can have the kids help you make it. UPDATE: I reduced the amount of salt listed due to reviewer feed back and listed it as optional.
