Posted for ZWT 2006. Can be garnished with hard-boiled eggs, if desired. Haven't tried this recipe yet. Cooking/prep times are estimates.

2 lbs yams, cooked
1 large onion, finely minced
3 fresh tomatoes, peeled and finely diced
1 teaspoon cayenne
1 pint peanut oil, divided
1/4-1/2 teaspoon dried thyme
salt, to taste
2 eggs, beaten
1 tablespoon flour

Steps:

  • Mash cooked yam until smooth.
  • In bowl, combine half of the tomatoes and half of the onions. Add cayenne. Fry in 1/4 cup peanut oil.
  • Season with thyme and salt, to taste.
  • In another bowl, combine fried mixture, remaining onions and tomatoes, and mashed yam. Add eggs and mix well.
  • On a pastry board sprinkled with flour, form yam mixture into balls.
  • Heat remaining oil and deep-fry yam balls until golden brown. Drain.
  • Garnish with hard-boiled eggs.

This is a popular african snack, don't know where my mom got the recipe from, but it's very tasty, you could use ordinary potatoes instead of yam. They are traditionally made plain, but can be flavoured with vegetables, meat, fish or different spices, depending on your mood. ; )

450 g white yams
2 tablespoons finely chopped onions
3 tablespoons chopped tomatoes
1/2 teaspoon chopped fresh thyme
1 green chili, finely chopped
1 tablespoon finely chopped spring onion
1 garlic clove, crushed
1 egg, beaten
salt & freshly ground black pepper
seasoned flour, for dusting
oil, for shallow frying

Steps:

  • Peel the yam, cut into pieces and boil in salted water for about 30 mins until tender. Drain and mash.
  • Add the onion, tomatoes, thyme, chilli, spring onion, garlic, then stir in the egg and seasoning and mix well.
  • Using a tablespoon, scoop a little of the mixture at a time and mould into balls.
  • Heat a little oil in a large frying pan, roll the yam balls in the seasoned flour and fry for a few minutes until golden brown.
  • Drain on kitchen paper and keep them warm while cooking the rest of the mixture.
  • Serve hot.

  • Peel the yam and cut into small chunks, rinse till clean, add to a pan, add enough water to cover it. Add salt to taste and bring to boil until soft and tender
  • Separate the egg yolk from white (put in a separate bowl). Drain the oil from the sardine if using sardines in sunflower
  • Check on the yam, once it is done, drain the water, add butter and mash till smooth. (I don’t recommend using blender or food processor for this part as it makes the yam stretchy and that is not what you want)
