GRANDMA'S CLAM CHOWDER

Grandma's Clam Chowder image

My kids grew up on this recipe so now, when they're home from college, it's a demanded meal. Great for Friday nights and Sunday afternoon. Awesome with a pale ale. Not a good recipe if you're on a diet!

Provided by Chef Erfolg

Categories     Chowders

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 13

1 lb chopped clam
6 slices thick slab bacon (cut into 1-inch squares)
10 small unpeeled yukon gold potatoes, cut into 1-inch cubes (or small white)
2 quarts fresh turkey broth (or chicken broth)
2 large carrots (peeled and sliced in 1/4 inch rounds)
1 large yellow onion (chopped)
2 -3 large celery ribs (trimmed and sliced thin)
1 cup flour
1/2 pint heavy cream
2 turkish bay leaves
1/4 cup chopped parsley
salt and pepper
1 teaspoon Tabasco sauce or 1 teaspoon hot sauce

Steps:

  • Lay out bacon in the bottom of a large stock pot over low heat. Render bacon slowly until nearly crisp but while grease is still very liquid (about 10 minutes).
  • Add onions, carrots and celery and cook until nearly soft. Turn up heat slightly if necessary (about 10 minutes).
  • Add potatoes to vegetables and mix well.
  • Sift in flour slowly, stirring constantly, until flour and bacon grease make a roux.
  • Add salt, pepper and hot sauce.
  • Add stock to cover vegetables (no more than 1" over).
  • Stir, add bay leaves and bring to a boil.
  • When just at boiling, reduce heat and simmer until potatoes are cooked through but not mushy (20-25 min.).
  • Add clams and increase heat until just boiling then remove from heat.
  • Stir in cream.
  • Ladle to bowls and garnish with parsley.

Number Of Ingredients 19

2 Tbsp canola oil
2 large onions diced
4 medium carrots peeled and diced
1 stalk celery diced
3/4 tsp kosher salt
1 tsp old bay seasoning
1/2 tsp freshly ground black pepper
1 can(s( 28 oz.crushed tomatoes
1 bottle 8 oz. clam juice
1 bottle 8 oz. water
5 slice bacon, cooked (I use turkey bacon)
2 Idaho potatoes peeled and diced 1/2 inch
6 oz. fresh string beans, 1 inch pieces
16 oz. frozen corn
1/2 tsp each dried thyme and dried oregano
2 tsp sugar or splenda no calorie sweetener
3 can(s) chopped or minced clams
additional water if broth is too thick
1 tsp crushed red pepper flakes (optional)

Steps:

  • 1. In large soup pot, on medium low temp, heat canola oil. Add onions, carrots and celery. Then add salt, pepper and Old Bay Seasoning and mix to combine. Cover pot, lower heat a bit and sweat vegetables until they're soft, about 5-8 minutes. Add cooked bacon and stir to combine. 2. Add crushed tomatoes, clam broth and water. Bring liquids to a simmer and cook covered on low for 20 minutes, Cook on very low if the liquids are bubbling too much. Add sugar and simmer another 5 minutes. Taste for seasoning and make sure the tomatoes are sweet enough. Add more sugar if necessary. 3. Add diced potatoes and simmer on low 15 minutes, covered. Add string beans, corn oregano, thyme and red pepper flakes if using. Cook 5 minutes and add the clams. Stir, let clams heat up and you're ready to serve.

OLD-FASHIONED CLAM CHOWDER

Old-Fashioned Clam Chowder image

Provided by Nancy Harmon Jenkins

Categories     soups and stews, appetizer

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

2 to 3 pounds soft-shell or steamer clams (30 to 40 clams) in the shell
1 cup salt mixed with 12 cups cold water
2 ounces salt pork, pancetta or blanched bacon (see note), diced
3 tablespoons unsalted butter
2 medium yellow onions, halved and thinly sliced
2 or 3 medium potatoes, peeled and cubed (about 2 1/2 cups)
Freshly ground black pepper to taste
2 bay leaves
2 cups whole milk
1/2 cup evaporated milk or light cream
Salt to taste
1/4 cup chopped fresh chives or flat-leaf parsley
Common crackers, optional

Steps:

  • Pick over clams, discarding any with cracked shells or that feel heavy, an indication they are full of mud. Rinse them under cold running water to get rid of surface grit. If clams are very gritty, set them in a bowl with brine solution and keep cool, or refrigerate for 2 to 3 hours.
  • Drain clams, and place in a large, heavy soup kettle; add about 1/2 inch water to kettle, and set over medium heat. Cook, uncovered, stirring frequently with a wooden spoon, until all clams have opened. As they open, remove them from kettle and set aside. (Any clams that fail to open after 10 to 15 minutes should be discarded.) Strain clam liquor through several layers of cheesecloth into a 2-cup measuring cup, and set aside. Remove clams from shells, and set aside.
  • Rinse out soup kettle and return to stove top. Add salt pork, pancetta or bacon dice and 1 tablespoon butter, and cook slowly over medium-low heat until dice brown a little on edges. Use a slotted spoon to remove dice from fat. Set aside.
  • Add onions to fat and cook, stirring frequently, until soft but not brown. Stir in potatoes, and continue cooking another 5 minutes, until potatoes begin to soften. Add enough water to clam liquor in measuring cup to make 2 cups; pour this over potatoes. Add black pepper and bay leaves.
  • Simmer gently, partially covered, until potatoes are tender. Add whole milk and simmer again. Stir in clams and evaporated milk or cream, stirring gently so as not to break open clam bellies. Taste, and add salt if necessary. Let come just to a simmer, and remove from heat. (Do not let chowder come to a full boil.)
  • Chowder can be set in a cool place for several hours to develop flavors. Reheat to a simmer (do not let boil), then stir in chives or parsley and remaining butter just before serving. Pass common crackers at the table if you wish.

New England Clam Chowder Recipe by Tasty image

Here's what you need: bacon, onion, celery, carrot, all-purpose flour, black pepper, dried thyme, minced clam, chicken stock, potatoes, heavy cream, bay leaf, oyster cracker

Provided by Jordan Kenna

Categories     Lunch

Yield 6 servings

Number Of Ingredients 13

4 oz bacon, 4 slices, chopped
2 cups onion, diced
1 cup celery, diced
1 cup carrot, diced
⅓ cup all-purpose flour
1 teaspoon black pepper
1 teaspoon dried thyme
4 cans minced clam, with juice
1 ½ cups chicken stock
2 potatoes, peeled and cubed
2 cups heavy cream
1 bay leaf
oyster cracker, for garnish

Steps:

  • Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.
  • Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crisp.
  • Add onion and sauté until softened and translucent, about 3 to 5 minutes.
  • Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes to avoid lumps.
  • Add black pepper, thyme, reserved clam juices, chicken stock, diced potatoes, and bay leaf. Stir to incorporate, then cover and bring to a boil.

IVAR'S CLAM CHOWDER

Ivar's Clam Chowder image

I've had this recipe for three years. If I remember right the person who gave it to me said it came from a newspaper article from Seattle Washington. I love this recipe. Just be careful not to make this when you're really tired. Worst cooking disaster was misreading 1/2 tea sugar for 1/2 cup. Talk about yuck! Cooking and prep time is just a guess. It's been a good year since I made this last.

SEITAN SEAFOOD (SCALLOPS, FISH, CLAMS, SHRIMP) RECIPE - (3.7/5)

Seitan Seafood (Scallops, Fish, Clams, Shrimp) Recipe - (3.7/5) image

Provided by blum099

Number Of Ingredients 12

INGREDIENTS
Gluten Dough
2 1/2 cups pure gluten powder (vital wheat gluten)
2 cups cold water
Cooking Broth
4 cups water
6 inch / 15 cm piece kombu seaweed
1 1/2 T salt
4 dried Chinese black mushrooms
2 T lemon juice
1 T sugar
1 t dried garlic

Steps:

  • To make the raw gluten, mix together the gluten flour and the water. Mix until if forms a smooth, firm dough. Knead briefly. Keep your hands wet when handling the dough for the rest of steps. For Scallops: Shape the raw gluten dough into a long roll about 1 inch / 2.5 cm in diameter. Cut into little rounds like very thin scallops. Mix the cooking broth ingredients and bring to a boil. Drop in the gluten rounds and simmer for 30 minutes. Refrigerate overnight in the cooking broth. For Fish: flatten the raw gluten into very thin fillet shapes. If your pieces are too big, just cut them. Mix the cooking broth and bring to a low boil. Add the gluten fillets and return to a low boil, rather than a simmer and cook for 30 minutes. this makes a softer seitan. Refrigerate overnight in the cooking broth. For Clams: Tear the raw gluten into tiny bits. Bring the cooking broth to a boil and drop in the gluten pieces. Boil for 3 minutes and refrigerate overnight in the cooking broth. For Shrimp: cut the raw gluten into little wedge shapes about 1 1/2 / 3.5 cm long and 1/2 inch / 1.5 cm thick. Mix the cooking broth and bring to a simmer. Drop in the gluten and simmer for 30 minutes. Refrigerate overnight in cooking broth.
