WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

- Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). Add half each of the following: ice cubes, tequila, Triple Sec and lime juice. If desired, add sugar to taste. Cover and process until blended., Serve in prepared glasses. Repeat with remaining ingredients. Garnish with reserved lime wedges.

WATERMELON MARGARITA SLICES

- Wash the outside of your watermelon and place it on a plate so that it doesn't roll - you may need to slice off some of the rind to make a flat spot.
- Trace the lids from the tequila and orange liquor bottles on either side of the melon. Then cut out with a sharp knife. Insert bottles into the watermelon and do not disturb for 48 hours.
- Remove liquor bottles. Cut watermelon into slices and drizzle with lime juice.

A super seasonal cocktail that's positively bursting with yellow watermelon, this tasty take on the margarita is fruitier and has a more vibrant color than the classic. - Bring sugar, 1/3 cup water, and lime peels to a boil, stirring, until sugar has dissolved. Remove from heat; let cool completely. Strain into a pitcher with lime juice.
- Working in batches, purée watermelon in a food processor or blender; strain through a coarse-mesh sieve (you should have 3 cups). Add melon purée, tequila, and elderflower liqueur to the pitcher with lime syrup and stir. Chill, covered, at least 2 hours and up to 2 days.
- When ready to serve, run a lime wedge around the rim of each glass and dip glasses in coarse salt. Fill glasses with ice and 1 or 2 thin lime rounds. To make each drink, add more ice and 1/2 cup tequila mixture to a cocktail shaker. Shake 15 seconds; strain into a glass. Repeat for remaining drinks and serve immediately.

- Pour salt in a shallow dish for dipping the rims of the glasses. Dip 4 martini glasses in water and then dip the rims in salt. Place in the freezer to frost, about 30 minutes. In a martini shaker shake together the orange-liqueur, Triple Sec, and tequila. Remove glasses from the freezer. Fill the bottom of each glass with the diced watermelon and pour alcohol mixture over the top, dividing evenly among the glasses. Slice lime into wedges and squeeze into glasses. Serve immediately.

- FOR SIMPLE SYRUP: Combine the watermelon and sugar in a small saucepan over medium heat. Use a potato masher or another utensil to mash the watermelon and sugar together, pushing out the liquid and dissolving the sugar. Simmer for 5 minutes, stirring frequently. Pour the mixture through a fine mesh sieve set over a bowl or jar, pressing the watermelon to extract all the liquid. Set aside to cool completely. Makes just over 1 cup of simple syrup.
- FOR WATERMELON JUICE: Combine the watermelon and water in a blender. Blend until smooth, pour through a fine mesh sieve set over a bowl or jar.
- Combine the tequila, watermelon juice, lime juice, and simple syrup in a cocktail shaker with ice. Shake until thoroughly chilled, about 30 seconds, and pour into glasses rimmed with lime juice and coarse salt. Garnish with lime wedges and serve imediately.
