"I love this whole-grain bread because it makes a pretty loaf with a great texture," says Carol Forcum of Marion, Illinois. "It's not at all heavy...in spite of the whole-wheat flour and wheat germ."

Number Of Ingredients 9

1/2 cup plain yogurt
1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1 cup whole wheat flour
1/4 cup toasted wheat germ
1 tablespoon sugar
1 tablespoon olive oil
1 teaspoon salt
1-2/3 to 2 cups bread flour

Steps:

  • Let yogurt stand at room temperature for 15 minutes. In a large bowl, dissolve yeast in warm water. Add the whole wheat flour, wheat germ, sugar, oil, salt and yogurt. Beat until smooth. Stir in enough bread flour to form a firm dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a loaf. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 40 minutes., Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool.

Yogurt Whole Wheat Bread image

I made this bread this morning. I used soy yogurt instead of dairy. I also added a tablespoon of caraway seeds and a tablespoon of Kirkland brand Organic No-Salt Seasoning. The texture of this bread is dense and somewhat spongy. The crust is nice and crispy. This recipe makes 1 two pound loaf of bread.

1 cup plain nonfat yogurt
1/2 cup warm water (110-115'F)
1 1/2 tablespoons vegetable oil
1 tablespoon maple syrup
1 teaspoon salt
1 1/2 cups whole wheat flour
2 1/4 cups bread flour
2 tablespoons wheat germ
2 teaspoons active dry yeast

Steps:

  • Add all the ingredients in the order given above making sure that you do not let the yeast touch any of the wet ingredients.
  • My machine beeps part way through the process and I added the caraway seed and the no-salt seasoning at that time.
  • When the bread is done, using oven mitts, remove the tray from the bread machine and shake the loaf out onto a cooling rack.
  • Cool completely before slicing and slather with some Earth Balance vegan margarine, so yummy.

This is my go-to recipe for my bread machine. I make a couple loaves every week. The recipe came in the booklet along with my machine...I wish I could find that booklet but luckily I wrote the recipe down. Since I'm messy with flour, I like to only measure these ingredients occasionally. I like to measure out all the dry ingredients, except the yeast, and store in a gallon-size baggie in the freezer. I make all at once about 6 baggies, so when I want to make a quick loaf before I go to bed, I just have to add the water, yogurt, my baggie of dry ingredients, the butter, and yeast. It's SO convenient.

  • Add liquids to the bread pan first, then dry. Level the dry; quarter the butter and add to corners. Make an impression in the center of the dry ingredients and add the yeast.
  • If bread collapses during the baking period, next time add 1 or 1 ½ tablespoons vital wheat gluten to the recipe to prevent from happening again.
  • I set my bread maker to 'whole wheat', 'light crust', '2 lb loaf'.

5-1/2 to 6-1/2 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast
2 tablespoons sugar
2 teaspoons salt
1 cup water
1 cup plain yogurt
3 tablespoons canola oil
1 teaspoon dill weed
1/2 teaspoon minced chives
1/4 teaspoon each dried oregano, thyme and basil

Steps:

  • In a large bowl, combine 2-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat water and yogurt to 120°-130°. Add to flour mixture; mix well. Stir in oil, herbs and enough of the remaining flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. 1 ¾ cups warm water
2 tablespoons honey
¾ teaspoon active dry yeast
3 ½ cups whole wheat flour, or more as needed, divided
1 tablespoon olive oil
1 teaspoon sea salt

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
  • Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
