LEMON AND WALNUT WAFFLES



Lemon and Walnut Waffles image

Number Of Ingredients 12

4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup sugar, divided
1 teaspoon salt
6 eggs, separated
3 1/2 cups milk
1/2 cup vegetable oil
1 teaspoon lemon extract
1 lemon, zested
Oil, for waffle iron
1 cup chopped walnuts
Maple syrup, for serving

Steps:

  • Preheat the oven to 225 degrees F.
  • In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
  • In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

You can always save leftover waffles as they will freeze well and make a great hot meal on a rushed school day morning.

1 cup flour
1/4 cup unsweetened cocoa powder
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup oil
1 egg
1/2 cup pecans, finely chopped
1/4 cup butter, softened
1/4 cup icing sugar
1 tablespoon unsweetened cocoa powder

Steps:

  • WAFFLES: combine flour, cocoa, sugar, baking powder and salt in a bowl.
  • Whisk together milk, oil and egg until blended. Add milk mixture to flour mixture and stir just until combined. Do not overmix.
  • Fold in pecans. Let batter stand for 10 minutes.
  • Cook in a preheated greased waffle iron according to manufacturer's instructions.
  • Serve with cocoa butter.
  • COCOA BUTTER: Combine all ingredients until blended. Makes about 1/4 cup.

8 frozen multigrain waffles
1/2 cup Nutella
2 medium bananas, sliced
1 cup sliced fresh strawberries
1/2 cup peanut butter

Steps:

  • Toast waffles according to package directions. Spread four waffles with Nutella. Layer with bananas and strawberries. Spread remaining waffles with peanut butter; place over top.

1 cup all-purpose flour
1/4 cup plain pistachios, chopped
1 1/2 teaspoons baking powder
1 1/2 eggs
2 tablespoons caster sugar
3/4 cup milk (I use Virtually fat-free milk)
7 tablespoons butter
1/4 teaspoon salt

Steps:

  • Heat a waffle iron.
  • Sieve flour and baking powder together in a bowl.
  • Keep aside.
  • Beat eggs in another bowl, one at a time, and whisk well.
  • Add sugar and cream well.
  • Mix in flour and milk alternately.
  • Melt 5 tbsps.
  • of butter and add it to the batter along with the chopped pistachios.
  • Mix well.
  • Grease the waffle iron with butter.
  • Pour a ladleful of batter in it.
  • Cook till golden and crisp on both sides.
  • Serve hot with honey or maple syrup.
