Steps:
- Cook ground beef, onion and green pepper in large skillet over medium heat 5 minutes or until beef is no longer pink; pour off drippings. Add tomatoes, water and taco seasoning; simmer 5 minutes, stirring occasionally.
- Toss pasta with meat mixture. Spoon 3 cups of mixture into an 11x7-inch baking dish. Sprinkle with 1 cup cheese; top with remaining meat mixture. Cover with foil; bake in preheated 375 degrees F oven 30 minutes. Uncover; sprinkle with remaining cheese. Return to oven 5 minutes or until cheese is melted.

FAMILY FAVORITE CHILI MAC
This one-skillet chili mac is on the table in less than half an hour, and it's loaded with family favorite flavors.

Steps:
- Cook and drain the elbow noodles according to the package directions; set aside.
- Brown the beef in a large skillet over medium heat. Drain excess grease. Stir in the Ragu® Sauce, chili powder, cumin, tomatoes and corn. Bring to a boil over medium high heat, cover,reduce to low and let simmer for 10 minutes.
- Stir in the cooked noodles and 1 cup of the cheese until melted and heated through. Sprinkle the rest of the cheese evenly over top, heat on low until melted. Serve immediately.

BAKED CHILI MAC
In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

Steps:
- Preheat oven to 350 degrees F.
- Cook the pasta according to package directions until al dente (if using regular macaroni this will take about 6 to 7 minutes, if using lower-carb versions it'll take about 15 minutes); drain and set aside.
- While pasta is cooking, in a large sauté pan cook the ground meat, onion, and garlic until meat is browned, about 5 to 7 minutes; drain fat if desired or necessary.
- Add the tomatoes, tomato paste, mild green chiles, beans, chili powder, ancho, oregano, cumin, pepper, salt, and tabasco (to taste) and simmer for 5 minutes.
- Add the cooked macaroni and stir well to incorporate.
- Pour mixture into a lightly pan-sprayed large casserole dish and sprinkle with the cheddar cheese.
- Bake at 350 degrees F for 20 to 30 minutes or until the cheese is golden and bubbly.
- Serve with a bit of sour cream for topping and veggies.
YUMMY BAKED CHILLI MAC
Just a yummy casserole I threw together with what I had on hand. It's creamy, hearty and a little spicy, just how a winter meal should be!

Steps:
- Pre-heat oven to 375.
- Cook pasta according to box, making sure not to over cook as it will continue cooking in oven.
- In a large skillet cook meat until no longer pink. Drain. Return to heat.
- Add onions to beef and cook about 6-7 minutes. Add beans and tomatoes, mix well.
- Add the seasonings. (I sometimes add a few dashes of hot sauce for a spicier version.) Simmer about ten minutes, stirring occasionally.
- Divide velveeta in half. Slice half the cheese into thin slices, cube the rest.
- Add a small amout of meat mixture to cooked pasta and layer on the bottom of casserole dish. Top with cubed velveeta and give a quick stir.
- Next add meat mixture. Top with sliced velveeta.
- Bake for 20-25 minutes, until cheese is slightly browned and edges are crispy.

- Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, tomato paste, chiles and seasonings. Drain macaroni; add to beef mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. - Preheat oven to 400 degrees F. Grease a 9x13 inch baking dish (or 3 qt baking dish) and set aside.
- Boil pasta, according to package directions, in a large pot of water. Be sure to add a generous pinch of kosher salt to the water, as it will flavor the pasta. Drain pasta, reserving 1/2 cup of pasta cooking water. Lightly drizzle drained pasta with a little olive oil to keep it from sticking and add it to a large mixing bowl.
- While pasta is boiling, add ground beef and brown over MED-HIGH heat, breaking up the meat into crumbles, until cooked through, about 4-5 minutes. Add onion and chili powder to the ground beef and cook another 2-3 minutes. Depending on how much fat is rendered from the beef, you may need to drain it at this point.
- Add salsa to ground beef skillet and stir to combine. Add to the cooked pasta in the mixing bowl.
