Easy Korean Seafood Pancake (Haemul Pajeon) image

Korean Seafood Pancake (Haemul Pajeon). A crispy chewy aromatic onion pancake topped off with squid rings and shrimp. A popular appetizer, snack or side dish in Korean cuisine that will keep your taste buds salivating for more. Easy to make at home and in less than 30 minutes!

1/2 cup squid rings (diced)
1/2 cup black tiger shrimp or jumbo shrimp (peeled and diced)
¼ cup avocado oil ( or neutral kind)
2 eggs (beaten)
3 cups green onion (chopped into 1-inch-long pieces)
1 cup yellow onion (thinly sliced)
¾ cup all-purpose flour
½ tsp salt
½ tsp garlic powder
3/4 cup water
2 tsp regular soy sauce (not light or dark!)
2 tsp rice vinegar
2 tsp sesame oil
¼ tsp sesame seeds

Steps:

  • In a large mixing bowl, add all-purpose flour, garlic powder and salt. Whisk together until combined. Then add sliced green onion, yellow onion, and water. Mix well until the batter is sticky and has covered all your onions.
  • In a non-stick pan set over medium heat, add neutral oil, and let it become hot. To test if it's hot enough, place a wooden chopstick into the oil and look for bubbles. Then carefully scrape your batter into the hot oil with a silicone spatula.
  • Spread the batter evenly in the pan and flatten down firmly. Sprinkle and press diced shrimp and squid over top, then pour the beaten eggs over top. Allow this to cook uncovered for 7-8 minutes or until the bottom is golden crispy brown with slight charring.
  • Flip the pancake over with the assistance of a large plate by sliding the pancake onto the plate and then flipping the uncooked side of the pancake into the pan. Fry on the other side for 3-4 minutes until the shrimp is pink. Slice on a cutting board and enjoy with the dipping sauce!

It's been a while since we had pajeon (literally translated pa means green onion/scallions and jeon means pancake, thus green onion pancake) since our California days with unlimited makgeolli (fermented rice wine). But for the sake of adding to our recipe list, we decided to make haemul pajeon (seafood pancake) for tonight while the kids spend the night at Komo's house (Auntie's). There are endless variations of this dish which can be made by adding or omitting certain ingredients according to personal preference.

3 cups frozen seafood mix (such as shrimp, oysters, clams, squid)
2 cups water
2 cups all-purpose flour
1 bunch scallions, cut into 2-inch pieces
2 eggs
1 clove garlic, minced
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
3 tablespoons soy sauce
1 scallion, thinly sliced
1 ½ teaspoons rice vinegar
1 teaspoon sesame oil
1 teaspoon brown sugar
½ teaspoon gochugaru (Korean red pepper flakes)
½ teaspoon sesame seeds

Steps:

  • Combine seafood mix, water, flour, 1 bunch scallions, eggs, garlic, salt, and pepper in a bowl; mix until batter is thick.
  • Heat olive oil in a nonstick skillet over medium-high heat. Pour half the batter evenly into the skillet. Cook until bottom and edges are browned, 7 to 8 minutes. Flip and continue cooking until the opposite side is browned, 7 to 8 minutes more. Transfer to a plate. Repeat with the remaining batter.
  • Combine soy sauce, 1 stalk scallion, rice vinegar, sesame oil, brown sugar, gochugaru, and sesame seeds in a bowl. Serve pancakes with dipping sauce.
