2 (6 ounce) packages frozen peas, thawed
1 pound cooked bacon, chopped
1 cup golden raisins
1 (8 ounce) package shredded Cheddar cheese
1 sweet onion, chopped
½ cup sunflower seeds
1 cup mayonnaise
2 tablespoons wine vinegar
¼ teaspoon white sugar, or to taste

Steps:

Toss peas, bacon, raisins, Cheddar cheese, onion, and sunflower seeds together in a large bowl. Stir mayonnaise, vinegar, and sugar together in a small bowl; drizzle over the salad and toss to coat.
Cover bowl with plastic wrap and refrigerate for 1 hour.

4 cups shelled fresh young green peas
3 tablespoons garlic-flavored olive oil
2 tablespoons balsamic vinegar
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/4 cup chopped red onion
2 tablespoons chopped scallions
3 tablespoons chopped fresh basil leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

Bring a large saucepan of salted water to a boil. Add the peas and simmer for 2 to 3 minutes or until just tender. Drain the peas and transfer them to a large bowl. Add the oil and vinegar, and toss to thoroughly coat the peas. Set them aside to cool to room temperature. When you are ready to serve the salad, gently stir in the bell peppers, red onion, scallions, basil, salt, and pepper. Serve immediately.;

2 medium yellow bell peppers, finely chopped
1 large red onion, finely chopped
3 bunches fresh cilantro, finely chopped
¾ cup extra-virgin olive oil
½ cup lemon juice, or more to taste
3 tablespoons minced garlic
2 tablespoons garlic powder
1 tablespoon lemon zest
salt and ground black pepper to taste

Steps:

Mix black-eyed peas, celery, bell peppers, onion, and cilantro together in a bowl.
Whisk olive oil, lemon juice, garlic, garlic powder, salt, and pepper together in a separate bowl. Toss dressing into beans and vegetables.
For best flavor, refrigerate for at least 4 hours before serving.
