This is my mothers recipe and it really is awesome! They are somewhat crispy but not cakey. You can add raisins, chocolate chips or coconut to this recipe too.

¾ cup shortening
1 cup packed brown sugar
½ cup white sugar
1 egg
¼ cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
1 tablespoon ground cinnamon
3 cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Finally, stir in the rolled oats. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.

This is without question my best cookie recipe. Someone brought these to me when I had my last baby and I ate the whole batch myself. I prefer the added crunch from using almonds rather than walnuts often called for in chocolate chip cookies.

1 cup sugar
1 cup brown sugar
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup shortening
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups oatmeal
1 cup chopped almonds, toasted if desired
2 cups chocolate chips (I use 1 cup semi-sweet and 1 cup milk chocolate)

Steps:

  • Cream together butter, shortening and sugars.
  • Add eggs and vanilla.
  • Cream well.
  • Combine dry ingredients.
  • Combine well with creamed mixture.
  • Mix in oatmeal, almonds and chips.
  • Drop onto ungreased cookie sheet.
  • Bake 10-12 minutes at 350°F.

1 ¾ cups all-purpose flour
¾ cup quick cooking oats
1 teaspoon salt
1 teaspoon baking soda
1 cup packed brown sugar

2 cups semisweet chocolate chips

Steps:

  • Melt butter over medium heat in a stainless steel saucepan (this is important so you can tell when the butter has browned.) Whisk frequently for several minutes. When you start to smell the nutty aroma of the butter browning, and see small browned bits at the bottom of the pan, immediately remove pan from heat and carefully pour browned butter into a large mixing bowl.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

It has ages since I have made a recipe straight out of a cookbook; and I missed the expertise of or the suggestions of the many great chefs here. These cookies turned out well and seem to be slightly different than other recipes posted here. These cookies really spread out and are quite chewy.
