ZESTY LASAGNA (SOUTHERN LIVING)



Zesty Lasagna (Southern Living) image

You can't go too wrong with a "Southern Living" recipe. This one is from their 1987 Annual Recipe Book. This is pretty basic and is very good as is although, you can doctor it up as well. This makes a great potluck dish and I often take this to friends, family, and neighbors when they require some TLC. Cooking time does not include standing time.

1 lb ground beef
2 -3 garlic cloves, minced
3 (6 ounce) cans tomato paste
1 3/4 cups water
1 (4 ounce) can sliced mushrooms, drained
2 bay leaves
salt and pepper, to taste
1 teaspoon italian seasoning
1/4 teaspoon dried oregano
6 lasagna noodles
1 (12 ounce) carton small curd cottage cheese
1 (8 ounce) carton sour cream
2 1/2 cups mozzarella cheese, grated and divided

Steps:

  • Brown ground beef and garlic in a heavy skillet over medium heat until meat is browned, stirring to crumble meat, drain.
  • Stir in the tomato paste, water, mushrooms, bay leaves, salt, pepper, Italian seasoning, and oregano.
  • Cover, reduce heat, and simmer 30 minutes, stirring occasionally.
  • Remove the bay leaves.
  • Cook noodles according to package directions and drain.
  • Combine cottage cheese and sour cream in a medium bowl; stir well.
  • Layer half each of noodles, meat sauce, and cottage cheese mixture in a greased 12 x 8 x 2 inch baking dish.
  • Sprinkle with 3/4 cup mozzarella cheese.
  • Repeat layers of noodles, meat sauce and cottage cheese mixture.
  • Cover and bake at 350°F for 40 minutes.
  • Top with the remaining mozzarella cheese and bake an additional 5 minutes or until cheese melts.
  • Let stand for 10 minutes before serving.

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

3/4 pound ground beef
1 medium onion, diced

2/3 cup water
2 to 3 tablespoons sugar
3 tablespoons plus 1/4 cup minced fresh parsley, divided
2 teaspoons dried basil
3/4 teaspoon fennel seed

1/4 teaspoon coarsely ground pepper
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, cook sausage, beef and onion over medium heat 8-10 minutes or until meat is no longer pink, breaking up meat into crumbles. Add garlic; cook 1 minute. Drain., Stir in tomatoes, tomato paste, water, sugar, 3 tablespoons parsley, basil, fennel, 1/2 teaspoon salt and pepper; bring to a boil. 1/3 cup 2% milk

4 cups frozen shredded hash browns, thawed
1 pound bulk pork sausage, cooked and crumbled

Steps:

  • Combine cottage cheese, chives and onions; set aside. In another bowl, whisk eggs, milk, salt and pepper until blended. In a large skillet, heat butter over medium heat. Steps:

  • Heat oven to 425°F.
  • Toss peppers, onions and garlic with 1/4 cup dressing; spread onto foil-covered rimmed baking sheet sprayed with cooking spray. Toss eggplant and zucchini with remaining dressing; spread onto second prepared baking sheet. Bake all vegetables 25 min., turning vegetables after 15 min.; cool.
  • Remove and discard skins and seeds from peppers; chop peppers. Place in medium bowl. Add remaining roasted vegetables; mix lightly. Mix cream cheese, cottage cheese and egg until blended.

16 ounces lasagna noodles
1 lb ground beef
36 ounces spaghetti sauce
1 tablespoon olive oil
1 tablespoon salt and pepper
24 ounces small curd cottage cheese
1 tablespoon finely chopped parsley
1 lb grated mozzarella cheese

Steps:

  • In a large skillet brown the ground beef in the oil. Season to taste with salt and pepper. Stir in pasta sauce; cover and simmer for 15 minutes. Stir occasionally.
  • Cheese filling: Mix together the cottage cheese, parsley, and mozarella cheese.
  • Cook pasta in 6 quarts of water for 10 minutes. Do not over cook.
  • Lightly grease a large baking pan(13x9) and spoon in enough meat sauce mixture to cover the bottom. Layer with lasagne. Spread part of the cheese filling over pasta.
