ZESTY LIME SANDWICH COOKIES
Brighten the flavor of this shortbread-like cookie with in-season limes. Lime zest in the cookie dough and in the buttercream filling add nice citrus notes to this Christmas cookie.

- Preheat oven to 325°F. Line two cookie sheets with parchment. In a large bowl beat butter with a mixer on medium to high 30 seconds. Add granulated sugar and lime zest. Beat until combined, scraping bowl occasionally. Beat in flour (mixture may be crumbly). Use your hands to gather dough into a smooth ball. Divide dough in half.
- On a lightly floured surface, roll one portion of dough at a time to about 1/8 inch thick. Using 2 1/2-inch tree-shape cutters, cut out dough. Place cutouts 1 inch apart on prepared cookie sheets.
- Bake 10 to 12 minutes or until bottoms are golden. Cool on sheets 4 minutes; cool on wire rack.
- Spread bottoms of half the cookies with a generous layer of Lime Buttercream Filling. Top with remaining cookies. If desired, use remaining filling to decorate cookie tops. Makes 26.

These cookies are equally festive during the summer or winter months.

- Whisk together the flour, baking powder and salt in a medium bowl.
- Combine the butter, brown sugar and 1/2 cup granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
- Add the egg and beat until incorporated. Add the vanilla extract, citrus zest, citrus juice and food coloring and beat until incorporated. Decrease the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
- Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl. Scoop tablespoons of the chilled dough and roll into balls. Toss each ball in the granulated sugar first, then in the confectioners' sugar, coating them very generously and thoroughly. Arrange the balls about 1 inch apart on 2 baking sheets (you should have 24 balls). Refrigerate for 20 minutes.
- Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
- Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for a few minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.
ZESTY LIME COOKIES

- Preheat oven to 350°F Grease or line sheets with parchment paper.
- Beat butter and sugar until well combined. Add zest and lime juice. Beat well. Add remaining dry ingredients and mix until dough comes together.
- Roll 2 tablespoons dough on a lightly floured surface to form 4-inch log. Curl into a ring and gently press ends together. Your cookie will look like a small donut. Place on prepared baking sheets.
- Bake in preheated oven 15-17 minutes or until lightly golden around the edges. Cool on baking sheet for 5 minutes. Transfer to wire rack ro finish cooling.
- GLAZE:.
- Combine ingredients for glaze. Drizzle over cookies to create a zigzag pattern and wait for the glaze to set.

KEY LIME COOKIES

- Preheat oven to 350 degrees F.
- In a large bowl, with an electric mixer, cream butter and sugar until fluffy. Add the eggs 1 at a time and the lime juice, and mix well. In separate bowl, combine flour, baking powder and salt. Gradually add the flour mixture to butter mixture until incorporated. Dough should be stiff but not dry. Shape into 1-inch balls, press thumb into center of balls to make an indentation, being careful not to press through to the bottom. Fill indentations with about 1 tablespoon Key lime curd. Bake for 15 minutes, until lightly brown. Transfer to a wire rack to cool. Sprinkle with powdered sugar.

- Preheat oven to 350 degrees F (175 degrees C). Combine the 2 teaspoons of lime juice with the milk, let stand for 5 minutes.
- In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the egg, then stir in the lime zest and milk mixture. Combine the flour, baking powder and baking soda, blend into the creamed mixture. Drop by rounded spoonfuls onto the ungreased cookie sheets.

- In the bowl of an electric mixer beat the butter, sugar, lime zest, extract and eggs on medium-low speed until well combined. Add flour and salt; beat until soft, non-sticky dough forms. You should be able to handle the dough without it sticking to your fingers. If dough is sticky, beat in additional until the dough comes to the correct consistency.
- Shape dough into a ball and remove 1/3. Roll into a ball and cover with plastic wrap. Chill for 15 minutes. Return 2/3 dough to the mixing bowl and add green food color. Remove dough from bowl. Divide green dough in half and roll each portion to 6-inch batons. Chill until firm, about 30 minutes.
- On lightly floured work surface, roll plain dough into a rectangle. Place a roll of green dough on the plain dough. Roll plain dough in a single layer around green dough. Cut away excess dough; reserve scraps for second green dough portion. Repeat process with remaining green dough and remaining plain dough.
- Place green sanding sugar on plate; roll dough batons in sugar until completely coated. Wrap sugar-coated dough logs in plastic wrap and freeze until semi-solid (they’ll slice easier!).
