Spicy Southwestern Potatoes and Ham image

1/2 cup gourmet spreadable cheese with garlic and herbs (from 4 to 6.5-oz. pkg.)
1 cup half-and-half
1 tablespoon finely chopped chipotle chiles in adobo sauce, if desired
1 (1 lb. 4-oz.) pkg. refrigerated sliced home fries potatoes
1 (1-lb.) pkg. Frozen Broccoli Cuts, thawed
1 cup cooked ham strips (2x1/4x1/4-inch)
4 oz. (1 cup) shredded Cheddar cheese

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Place spreadable cheese in medium bowl. Gradually stir in half-and-half and chiles; blend well. Set aside.
  • In sprayed baking dish, layer potatoes, broccoli and ham. Pour spreadable cheese mixture over top; sprinkle with Cheddar cheese. Cover with foil.
  • Bake at 350°F. for 45 minutes. Uncover; bake an additional 15 minutes or until bubbly around edges.

This family-friendly brunch dish is basically a crustless quiche; serve it hot, cold, or at room temperature.

Butter, for pan
6 large eggs
1 1/2 cups heavy cream
2 teaspoons coarse salt
1/2 teaspoon ground pepper
2 baking potatoes (about 1 1/4 pounds), peeled
10 ounces sugar-baked ham, thinly sliced (less than 1/4 inch thick)
1 package (10 ounces) frozen broccoli, thawed and squeezed dry with paper towels
1/2 cup grated cheddar cheese (2 ounces)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch-round cake pan (at least 2 inches deep). Line bottom of pan with a parchment-paper round.
  • In a large bowl, whisk together eggs and cream; season with salt and pepper. Thinly slice potatoes (less than 1/4 inch thick); drop into egg mixture.
  • Lifting potatoes out of egg mixture, arrange half the potatoes in pan. Layer with ham, broccoli, cheese, and remaining potatoes. Pour egg mixture over top. Press down firmly so that potatoes are fully submerged in egg mixture.
  • Cover with foil; bake until potatoes are tender, about 1 hour. Uncover; continue baking until golden and set, 30 to 45 minutes more.
  • Cool 15 to 20 minutes in pan. Run a knife around edge, and carefully invert onto a plate. Peel off parchment. Reinvert, top side up. Slice with a serrated knife.

2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
1 can (4 ounces) mushroom stems and pieces, drained
1 medium onion, chopped
1/3 cup each chopped sweet red pepper and green pepper
3 tablespoons butter
3 cups cubed cooked potatoes
3 cups cubed fully cooked ham
1/2 cup all-purpose flour
2 tablespoons minced fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
8 large eggs, lightly beaten
1-3/4 cups whole milk

Steps:

  • Combine the cheeses; sprinkle half into a greased 13x9-in. baking dish. In a large skillet, saute the mushrooms, onion and peppers in butter until crisp-tender. Sprinkle over the cheese. Add the potatoes and ham. Sprinkle with remaining cheese. In a large bowl, combine the flour, parsley, salt and pepper. Add the eggs and milk; mix until smooth. Pour over the top., Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

4 potatoes
16 ounces ham
1/2 onion
1 (10 1/2 ounce) can cream of mushroom soup
4 ounces low-fat monterey jack pepper cheese

Steps:

  • Line a 2 quart casserole dish with foil; spray with pam.
  • Preheat oven to 350.
  • Dice onion, ham, potatoes, cheese.
  • Place in the foil lined casserole in this order: onion, potato, ham, cheese, soup (not diluted).
  • Repeat layers till done.
  • Sprinkle with salt and pepper.
  • Cover tightly and bake until potato is tender, 45-60 minutes.

1 ½ teaspoons pepper
8 ounces sharp Cheddar cheese, grated
1 medium tomato, seeds removed, chopped

Steps:

  • Preheat grill (medium setting) **. Make foil packet by placing potatoes, onions and green peppers on the center of foil sheet. Sprinkle pepper over entire mixture and stir to mix well. Bring up foil sides and double fold top and sides to seal, leaving room for heat circulation inside. Place on grill for 20 minutes or until potatoes are tender.
  • Remove from grill; add cubed ham, stirring slightly to mix. Reseal and return to grill for approximately 10 minutes. Remove from grill and sprinkle cheese & tomatoes over entire mixture. Return to grill, leaving the packet unsealed, but the grill lid closed, and cook for approximately 5 minutes or until cheese is melted. Remove from grill and serve.
