"Coleslaw is one of my husband's favorite side dishes," says Shirley Glaab from Hattiesburg, Mississippi. "We love this version because it's not as sweet as other slaws, but it's very colorful and the ingredients always make our mouths water."

1-1/2 cups shredded cabbage
2 tablespoons chopped sweet red pepper
1 tablespoon minced fresh parsley
1 tablespoon chopped green onion
3 tablespoons cider vinegar
1 tablespoon water
1-1/2 teaspoons sugar
1 teaspoon Dijon mustard
1 teaspoon olive oil
1/4 teaspoon dried basil
1/4 teaspoon coarsely ground pepper
1/8 teaspoon garlic salt

Steps:

  • In a small bowl, combine the cabbage, red pepper, parsley and onion. In another bowl, combine the remaining ingredients; pour over cabbage mixture and toss to coat. Cover and refrigerate until chilled. Toss before serving. Serve with a slotted spoon.

¼ teaspoon dry mustard
¼ teaspoon poppy seeds
¼ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon hot pepper sauce
4 cups shredded green cabbage
2 carrots, shredded

Steps:

  • Whisk apple cider vinegar, canola oil, sugar, dry mustard, poppy seeds, black pepper, salt, and hot pepper sauce in a bowl, stirring until sugar has dissolved.
  • Mix cabbage with carrots in a large salad bowl and pour dressing over slaw. Stir to coat. Refrigerate at least 2 hours before serving.

1 carrot, shredded
2 cups mayonnaise
1 cup cider vinegar
½ cup white sugar
3 tablespoons dried minced onion
salt and pepper to taste

Steps:

  • In a large bowl, combine shredded cabbage and carrot.
  • In a large empty mayonnaise jar, add the 2 cups mayonnaise, vinegar, sugar and dry onion flakes. Shake well until blended.
  • Pour dressing mixture over cabbage and carrots and toss well. Chill and serve.

1/8 teaspoon cayenne pepper
1/2 pound boneless skinless chicken breast
1 package (3 ounces) hot and spicy ramen noodles
4 cups shredded cabbage
2 cups broccoli coleslaw mix
3 green onions, chopped
2 tablespoons sesame seeds, toasted
2 tablespoons sliced almonds, toasted
DRESSING:
3 tablespoons sugar
2 tablespoons reduced-sodium soy sauce
4-1/2 teaspoons cider vinegar
2-1/4 teaspoons water
2-1/4 teaspoons canola oil
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine the first eight ingredients; rub over both sides of chicken. Broil 3-4 in. from the heat for 5-6 minutes on each side or until a thermometer reads 170°. When chicken is cool enough to handle, shred with two forks; cool completely. , Set aside seasoning packet from ramen noodles. Break noodles into small pieces; place in a large bowl. Add the cabbage, broccoli coleslaw, onions, sesame seeds, almonds and chicken. , In a jar with a tight-fitting lid, combine the dressing ingredients. Add the contents of seasoning packet; shake well. It does turn lavender from the purple cabbage after sitting so if that will bother you just use all green. Might be good for a party of purple foods. LOL. Some nice additions would be: red bell pepper, shredded carrots, green onions and radishes. Have fun!

2 cups red cabbage, chopped (about 4 oz)
1 cup white onion, chopped
1/2 cup best foods mayonnaise
1/4 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons hot prepared horseradish
1 teaspoon sugar (can use Splenda packet)
1/2 teaspoon dry mustard
1/2-1 teaspoon creole seasoning

Steps:

  • In a large bowl, toss cabbages and white onion together.
  • In a small bowl, whisk remaining ingredients together.
  • Pour dressing into cabbage mix and toss together.
