SALT-ROASTED SNAPPER WITH CARIBBEAN SPICES
As well as red snapper, this elegant preparation can be used for any whole round fish in the same size range, such as branzino, sea bass, trout, or Arctic char. The salt crust ensures moist and flavorful flesh that (trust us) doesn't taste overly saline.

Steps:
- Preheat oven to 450 degrees. Rinse fish thoroughly inside and out; pat dry with paper towels. In a large bowl, stir together salt, egg whites, lime zest, thyme leaves, allspice, and chopped chile until mixture is thoroughly combined and has the texture of wet sand. Transfer one-thirdof mixture to a rimmed baking sheet; pat into a 1/2-inch-thick layer, slightly larger thanfish. Arrange half each of lime rounds, thyme sprigs, and sliced chile on top of salt, roughly inshape of fish. Fill fish cavity with remaining lime, thyme, and chile; place on top of salt mixture.Pour remaining salt mixture over center of fish; pat down with your hands to fully enclose body,with head and tail sticking out.
- Roast until fish is just cooked through and crust turns hard and golden, 25 to 30 minutes for a1 1/2-to-2-pound fish, 30 to 35 minutes for larger. Gently break away crust with a large spoon. Transfer fish to a carving board, remove skin and separate fish from bones with a serving fork, and serve.
ROASTED SNAPPER, ISLAND EDITION
Steps:
- Preheat the oven to 450 degrees F with a large cast-iron skillet or small rimmed sheet pan (an aluminum quarter sheet pan is ideal) on the middle rack. Do this at least half an hour before cooking.
- Grind the allspice berries coarsely with a mortar and pestle. Add the garlic and grind to a chunky paste. Add the ginger and grind until broken up, then add the Scotch bonnet and grind to a paste.
- Stir in the thyme, half the lime zest, half the salt, and 1 tablespoon of the oil.
- Cut 5 diagonal, shallow gashes across each side of the fish from the head to the tail. Try not to cut more than 1/3 of an inch deep. The cuts should be diagonal from belly to back but also diagonally into the flesh...on the bias.
- Lightly lube the fish with oil. Sprinkle with the remaining half of the salt, being careful to salt the cavity as well.
- Smear the paste onto the fish with a spoon, working it into the gashes. Repeat on the second side.
- Carefully place the fish on the preheated pan and roast for 12 to 15 minutes or until the fish flakes with a fork.
- To remove, carefully work a metal spatula (a slotted "fish turner" is ideal) and carefully move to a cutting board or platter to serve with the lime wedges. Serving in pieces is virtually impossible so just let people eat directly off the board or platter.

HOT ROAST SNAPPER WITH COCONUT, CHILE AND LIME SALSA
Steps:
- For the snapper: Preheat the oven to 400 degrees F.
- Using a very sharp knife, score 3 deep slashes on each side of the snapper. Squeeze the lime juice all over the fish.
- Stuff the prepared ginger-herb mixture into the slits as well as into the cavity of the snapper. Set the fish on a baking sheet lined with aluminum foil, and slide it into the preheated oven. Roast, uncovered, for 45 minutes, by which time the flesh closest to the bone of the thickest area should be perfectly white, and not at all glassy.
- For the salsa: Meanwhile, use a potato peeler to make wafer-thin shavings of the coconut flesh. Mix the sugar with the lime juice, stirring until it dissolves, and toss with the coconut, and the lime zest, chiles, and cilantro leaves. Serve the salsa with the snapper
CAJUN RED SNAPPER
Steps:
- On a large piece of wax paper, mix together paprika, cayenne pepper, black pepper, onion powder, thyme, basil, garlic powder, and oregano.
- In a small saucepan, over medium heat, melt butter or margarine with oil. Brush both sides of the snapper filets with the butter mixture, reserve the remaining butter mixture. Coat both sides of the filets with the seasoning-mixture.
- Heat a large cast-iron skillet over high heat until a drop of water sizzles on it. Drizzle half of the remaining butter-oil mixture on one side of fish fillets. Place fillets butter side down in pan. Cook over a high heat until the fish is deeply browned, about 5 minutes. Drizzle remaining butter-mixture over the fish and flip the fish over. Cook until fish is browned and flakes when tested with a fork, about 5 minutes more. Season to taste with salt.

WHOLE RED SNAPPER BAKED IN A SALT CRUST
Steps:
- Preheat oven to 450°F.
- In a bowl stir together salt and water until combined well. On a large baking sheet spread half of salt mixture in a rectangle just larger than the red snapper and set fish on top. Halve lemon crosswise and cut 3 slices from 1 half, reserving remaining half. Insert slices into cavity of fish. Pat remaining salt mixture over fish to cover completely and bake in middle of oven 30 minutes.
- Rap all around edge of salt crust with the back of a large spoon to loosen and lift top off. Squeeze juice from reserved lemon half over fish and drizzle with oil.
THE CARIBBEAN ROOM'S RED SNAPPER

Steps:
- To make the sauce.
- In a large saucepan, melt the butter.
- Add the shrimp and mushroom caps and cook for ten minutes over medium low heat.
- Add green onions, crawfish tails, wine, lemon juice, Worcestershire sauce, bay leaves, thyme, pepper and salt, and simmer gently for 15 minutes, stirring occasionally.
- As the sauce is cooking.
- In a shallow bowl, mix the beaten egg with the milk to create an egg wash.
- Place the flour in a second shallow bowl or plate.
- Place a large skillet over medium heat and warm the oil.
- Dip each fish fillet in the egg wash and dredge in the flour.
- Pan fry until a light golden brown, turning once.
- Place the fillets on serving plates and top with sauce.
- Note: The Caribbean Room serves these with tiny boiled potatoes with parsley.
SUMAC-ROASTED SNAPPER WITH LIME YOGURT
This whole roasted fish recipe is the perfect place to put the trinity of sumac, lime, and yogurt to work.

Steps:
- Preheat the oven to 425°F.
- Carefully use a sharp knife to score each side of the fish, making 5 or 6 incisions into the skin and flesh of the fish (this will help even more flavor seep in to the flesh). Season inside and out with the sumac, salt, and pepper. Really pack on the sumac! Place the fish on a baking sheet. Stuff with the sliced garlic and drizzle the olive oil all over. Roast until the eyes have popped and the flesh is firm to the touch, about 20 minutes.
- In a medium bowl, stir together the yogurt, lime zest, lime juice, salt, and grated garlic.
- Place the roasted fish on a serving platter and scatter mint over the top. Squeeze the lime juice over the fish and serve the yogurt and lime wedges on the side.
BAKED RED SNAPPER WITH GARLIC, LIME, AND CILANTRO
Steps:
- Spray a baking dish with cooking spray. Place red snapper skin-side down in the baking dish. Sprinkle evenly with garlic, garlic salt, and red pepper. Spread cilantro evenly over the fish; squeeze lime evenly on top.
- Marinate in the refrigerator, 30 minutes to 1 hour.
- Preheat the oven to 425 degrees F (220 degrees C). Melt butter and pour evenly over the fish.
- Bake in the preheated oven until flesh flakes easily with a fork, 15 to 18 minutes. Serve with juices spooned over the fish, if desired.
