Like your favorite zucchini bread, but in cookie form, this recipe comes together easily with Betty Crocker oatmeal cookie mix.

1 pouch (17.5 oz) Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 egg
1 tablespoon water
1 zucchini, grated, squeezed dry
1/3 cup sliced almonds

Steps:

  • Heat oven to 350°F. Line 2 cookie sheets with cooking parchment paper.
  • In medium bowl, stir cookie mix, butter, egg and water until soft dough forms. Gently stir in zucchini and half of the almonds.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto cookie sheets. Top with remaining almonds.
  • Bake 11 to 13 minutes or until edges are golden brown. Remove from cookie sheets to cooling racks. Cool completely before storing.

1 teaspoon vanilla extract
¾ cup honey
1 egg
1 cup all-purpose flour
⅛ teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup rolled oats
½ cup chopped pecans
½ cup grated zucchini
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large mixing bowl, cream together the shortening, vanilla, and honey. Beat in the egg until well blended. Combine the flour, baking soda, baking powder and salt; stir into the honey mixture. Stir in the rolled oats, zucchini, pecans and raisins. Drop by teaspoonfuls on greased cookie sheet, and flatten slightly using a fork.
  • Bake 10 to 12 minutes in the preheated oven, until browned. Remove from cookie sheets to cool on a wire rack.

1 cup shortening
1/2 cup plus 3 tablespoons sugar, divided
1/4 cup packed brown sugar
1 egg
1 teaspoon almond extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/8 teaspoon salt
3 tablespoons sliced almonds

Steps:

  • In a small bowl, cream the shortening, 1/2 cup sugar and brown sugar until light and fluffy. Beat in egg and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Shape into 1-in. balls. Roll in remaining sugar. Place 2 in. apart on ungreased baking sheets. Flatten with the bottom of a glass. Press three almond slices into the center of each. , Bake at 350° for 9-11 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.

8 oz crushed pineapple, 1 can, with juice
3 eggs
1 cup vegetable oil, or oil of your choice
1 cup sugar
1 cup brown sugar
2 cups zucchini, grated
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
½ teaspoon nutmeg
1 cup chopped almond
thinly sliced almond, for topping
¼ tablespoon vanilla
½ cup powdered sugar
1 tablespoon milk

Steps:

  • Mix all of the dry ingredients (flour, salt, baking soda, cinnamon, nutmeg, chopped almonds) in a bowl, and set aside.
  • Preheated oven at 350ºF (175ºC).
  • In a new bowl, combine pineapple, eggs, vegetable oil, sugar, brown sugar, zucchini, and vanilla, and mix well.
  • Pour the dry ingredients gradually into the wet ingredients bowl, and mix them until smooth.
  • Spray your baking pan and pour in the mixture, top with sliced almonds.
  • Bake for 60 minutes (times may vary depending on oven), and check for doneness with a toothpick.

1/2 cup | 113 g softened room temperature butter (dairy or non dairy)
3/4 cup | 165 g light brown sugar
1/4 cup | 50 g white granulated sugar
1 teaspoon vanilla extract
2 3/4 cups | 264 g almond flour
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 lightly packed cup | 4 oz shredded zucchini (lightly blot the zucchini before measuring)
1/2 cup |128 g chocolate chips (dairy free if needed)
1/2 cup | 58 g chopped walnuts (optional)

Steps:

  • Preheat oven to 350°F/177°C. Line a couple of large cookie sheets with baking paper. Set aside.
  • In a large mixing bowl beat together the butter and sugars with an electric mixer or stand mixer. Add the vanilla extract and mix until combined.
  • Add the almond flour, cinnamon, salt and baking soda. Mix on a low speed until a soft dough forms.
  • Add the zucchini and continue mixing on a low speed until it well evenly distributed throughout the dough.
  • Mix in the chocolate chips and walnuts (if using). The dough should be thick and soft at this point.
  • Scoop out large clumps of dough, about 1 1/2 tablespoons or 50 grams worth, and roll in balls. Place on your prepared baking sheets. Leave at least 2 1/2 inches in between each ball to leave room for spreading.
  • Bake for 11-12 minutes until the edges have goldened slightly. If you want crispier edges bake 12 minutes.
