Grandma Gladys's Zucchini Soup image

Our granddaughter loves this soup made by her great grandma! Substitute ground beef, Italian sausage, and beef stock for the ground turkey, turkey Italian sausage, and chicken stock, if desired.

10 ounces ground turkey
3 turkey Italian sausages, casings removed
1 cup chopped green bell pepper
⅔ cup chopped onion
4 stalks celery, thinly sliced
2 (28 ounce) cans stewed tomatoes
6 zucchini, cut into cubes
4 (10.75 ounce) cans low-sodium chicken broth
1 tablespoon Italian seasoning
½ teaspoon sea salt
½ teaspoon dried tarragon
½ teaspoon garlic powder
ground black pepper to taste
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Cook and stir ground turkey, sausage, bell pepper, onion, and celery in a large pot over medium-high heat until meat is no longer pink and vegetables are tender, 10 to 12 minutes.
  • Stir tomatoes, zucchini, chicken broth, Italian seasoning, sea salt, tarragon, garlic powder, and black pepper into turkey mixture; bring to a boil, reduce heat to low, and simmer until flavors combine, about 1 hour. Ladle soup into bowls and garnish with Parmesan cheese.

8 oz crushed pineapple, 1 can, with juice
3 eggs
1 cup vegetable oil, or oil of your choice
1 cup sugar
1 cup brown sugar
2 cups zucchini, grated
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
½ teaspoon nutmeg
1 cup chopped almond
thinly sliced almond, for topping
¼ tablespoon vanilla
½ cup powdered sugar
1 tablespoon milk

Steps:

  • Mix all of the dry ingredients (flour, salt, baking soda, cinnamon, nutmeg, chopped almonds) in a bowl, and set aside.
  • Preheated oven at 350ºF (175ºC).
  • In a new bowl, combine pineapple, eggs, vegetable oil, sugar, brown sugar, zucchini, and vanilla, and mix well.
  • Pour the dry ingredients gradually into the wet ingredients bowl, and mix them until smooth.
  • Spray your baking pan and pour in the mixture, top with sliced almonds.
  • Bake for 60 minutes (times may vary depending on oven), and check for doneness with a toothpick.
  • While baking, mix your glaze ingredients together until smooth.
  • Let the bread cool down, drizzle with the glaze!
  • Enjoy!

A fantastic light and healthier pasta dish with zucchini that works very well as a balanced vegetarian main course. Serve with freshly grated Parmesan cheese.

3 tablespoons blanched almonds
⅓ pound dried spaghetti
2 tablespoons extra-virgin olive oil
2 zucchini, grated
1 clove garlic, crushed
salt and ground black pepper to taste
2 teaspoons butter
2 tablespoons chopped fresh parsley
1 lemon, zested
1 squeeze lemon juice

Steps:

  • Heat a small pan over medium heat. Add almonds and toast, about 2 minutes. Let cool slightly and roughly chop.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While pasta cooks, add olive oil to a saucepan over medium heat. Add zucchini, garlic, salt, and pepper and fry until tender, 3 to 5 minutes.
  • Reserve 1/4 cup of the pasta cooking water and drain. Add cooked spaghetti to the saucepan with the zucchini. Add butter, parsley, lemon zest, lemon juice, and toasted almonds and stir to coat.

  • Heat a stock pot with a medium-high heat and add in a 1/4 cup (60 ml) extra virgin olive oil, after 1 minute add in the chopped onion & garlic, mix with the olive oil, after 3 minutes and the onion & garlic are lightly golden fried, add in the chopped potatoes, the pieces of zucchini and 3 cups of vegetable broth, once it comes to a boil, place a lid on the pan and lower the fire to a low-medium heat
  • Meanwhile, add 1 cup (130 grams) of raw blanched almonds into a bowl, along with 1 tablespoon (15 ml) extra virgin olive oil, 1 tablespoon (21 grams) of honey and season with sea salt, mix together until well combined
  • Transfer the coated almonds into a baking tray lined with parchment paper (reserve the bowl you mixed the almonds in), make sure they´re all in a single layer, add into a preheated oven, bake + broil option (bottom + top heat) for 10 minutes, remove the almonds from the oven, transfer back into the same bowl you mixed them in, give them a quick toss to pick up any left over honey and olive oil that was left in the bowl, add the almonds back into the parchment paper, make sure they´re in a single layer and let them air dry
