2 medium onions (chopped)
8 oz sweet Italian sausage meat
2 tbs butter
6 medium zucchini (sliced (1 1/2 lbs))
2 cups chicken broth
1 cup half and half cream (or light cream. See NOTES)
1/8 tsp salt
1 pinch red pepper flakes
1/4 cup flour
1/2 cup water

Steps:

  • Heat butter in a large dutch oven over medium heat. Add the sausage and the onion and cook until the sausage is no longer pink, breaking up into smaller bits as it cooks.
  • Add the zucchini, chicken stock, salt and pepper flakes. Bring to boil, then reduce heat to simmer and cook until the zucchini is crisp-tender.
  • Add the cream and heat through.
  • If you wish to thicken the soup, mix the flour and water and gradually stir into the soup. Heat until the soup gently bubbles then cook, stirring frequently, until the flour is cooked--about 5 minutes.

1 Tbsp. avocado oil or olive oil
8-10 oz. mild Italian sausage
1 medium onion, chopped, about 1 cup
1-2 stalks celery, chopped, about 1/2 cup
1 medium green bell pepper, chopped
2 large cloves garlic, minced
4 cups chicken stock
1 (14.5 oz.) can diced tomatoes
1 Tbsp. fresh minced basil or 1 tsp. dried basil
1 Tbsp. fresh minced parsley or 1 tsp. dried parsley
Pinch red chili flakes
1 (8-10 oz.) zucchini, cut in half horizontally then sliced 1/4-inch thick
1/2 cup dry orzo
Kosher salt and fresh black pepper
Fresh basil, thinly sliced
Freshly grated Parmesan cheese

Steps:

  • In a large dutch-oven, heat avocado oil over medium-high heat. Add sausage and cook until browned while breaking up the meat with a wooden spoon.
  • Add onions, celery, bell pepper, and a pinch of salt. Cook until tender, 5-7 minutes, while stirring frequently. Stir in garlic and cook for 30 seconds or until fragrant.
  • Add chicken stock, tomatoes, basil, parsley, and red chili flakes. Season with salt and pepper to taste. Bring to a simmer. Stir in zucchini and orzo. Reduce heat and cook partially covered until tender, 10-12 minutes.
  • Serve with fresh basil and Parmesan cheese.

1 medium onion, chopped
1 medium green pepper, chopped
3 cups beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained

1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 medium zucchini, cut into 1/2-inch pieces
1/2 cup uncooked orzo pasta

Steps:

  • In a large saucepan, cook sausage, onion and pepper over medium heat until sausage is no longer pink and vegetables are tender, 4-6 minutes, breaking sausage into crumbles; drain., Add broth, tomatoes, basil and parsley; bring to a boil. Stir in zucchini and orzo; return to a boil. Cook, covered, until zucchini and orzo are tender, 10-12 minutes.

2 cups zucchini (diced)
14.5 oz diced tomatoes
2 cups beef broth
½ tsp ground sage
½ tsp thyme
1/2 cup Parmesan cheese (for topping)

Steps:

  • Brown sausage & onions in a large pot over medium heat. Stir to crumble sausage- I use a Chop Stir and it's amazing! Drain.
  • Add in remaining ingredients, except zucchini, and stir to combine. Cover and simmer for 45 minutes, until vegetables are soft.*
  • Add in zucchini and cook an additional 5-7 minutes.
  • Serve topped with shredded Parmesan cheese.

1 package (19-1/2 ounces) hot or sweet Italian turkey sausage links, casings removed
4 celery ribs, chopped
1 medium onion, chopped
2 teaspoons Italian seasoning
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
2 medium zucchini, cut into 1/2-inch cubes
2 medium green peppers, chopped
4 cans (14-1/2 ounces each) no-salt-added whole tomatoes, undrained, crushed
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 teaspoon sugar

Steps:

  • In a 6-qt. stockpot, cook and crumble sausage over medium-high heat until no longer pink, 5-7 minutes. 1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
  • Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
  • Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

2 potatoes, small cubes
2 (14 ounce) cans chicken broth

2 cups cheddar cheese, shredded
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a saucepan brown sausage and onion. Crumble sausage. Drain and place sausage and onion into a large dutch oven.
  • Add chicken broth and zucchini, carrots, potatoes. Add salt and pepper. Bring to a boil and then turn heat to simmer. Simmer slowly for 20 to 25 minutes.
  • Add evaporated milk and cheese. Slowly stir until cheese is melted.
