Steps:
- Heat the oven to 350 degrees F.
- Brush 1 teaspoon olive oil on the bottom of an 8 by 8-inch baking dish. Arrange the slices of zucchini in the dish with an overlapping pattern in rows or a spiral in a pie dish. Sprinkle with salt, pepper and paprika.
- To make the topping: In a bowl, stir together the panko breadcrumbs, thyme, Parmesan cheese and season with a sprinkle of salt and a few grinds of pepper. Add 1 tablespoon olive oil and stir until all the breadcrumbs are soaked with the yellow tint of the oil. Sprinkle the topping evenly over the dish and bake until the top is golden brown, 30 to 35 minutes.
APPLE CINNAMON WHITE CAKE
A buttery white cake that comes together in minutes but tastes like you spent all day making it. Adding apples and cinnamon with brown sugar in layers makes this cake into an autumn delight. A scoop of ice cream is especially good with this cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- Mix brown sugar and cinnamon together in a bowl.
- Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
- Combine flour and baking powder together in a bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan; add half the apples and half the brown sugar mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and brown sugar mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

RUSTIC COUNTRY SOURDOUGH BREAD
This bread taste so good and so easy to make. You let your Kitchen Aide do all the work. The crust is nice and crispy and the inside is perfect. You can make loaves of bread or dinner rolls. Hope you enjoy.

Steps:
- Place the eggs in warm water and let sit for about 10-15 minutes.
- Warm the KA bowl by filling with hot water, dumping it out and towel dry.
- Dissolve the yeast in water in your KA mixing bowl.
- Let stand 5 minutes.
- On speed 1, stir in sourdough starter, sugar, salt, eggs, oil and 3 cups flour.
- Gradually add remaining flour or enough that the dough will separate from the sides of the mixing bowl. This should take about 8 minutes.
- Place in a well-greased bowl, turning to grease top.
- Cover and let rise in a warm place (85 degrees F), free from drafts, 1 to 1 1/2 hours or until doubled in bulk.
- Punch dough down; divide in half and shape each half into a loaf. (These also can be make into dinner rolls.).
- Place loaves in greased 9x5x3 inch loaf pans.
- Brush top with oil.
- Cover loaves; let rise in a warm place (85 degrees F), free from drafts, about 1 hour or until doubled in bulk.
- Bake at 375 degrees F for 30 to 35 minutes or until loaves sound hollow when tapped. Remove from pans and brush with melted butter.
BAKED ZUCCHINI NOODLES WITH CREAMY RICOTTA

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat olive oil in an oven-safe skillet over medium heat. Add onion and garlic and saute until soft, 2 to 3 minutes. Add ground turkey and cook and stir until browned, crumbly, and no longer pink, 5 to 7 minutes. Pour in marinara sauce and diced tomatoes; let simmer until thick, about 10 minutes.
- Squeeze zucchini noodles to get most of the water out. Add to the skillet and stir to combine. Add ricotta cheese in 1-tablespoon dollops around the skillet. Sprinkle mozzarella cheese on top.
- Bake, uncovered, in the preheated oven for 20 minutes. Remove from the oven and let sit for 5 minutes to set up. Sprinkle with basil and red pepper flakes before serving.

BAKED ZUCCHINI PARMESAN
Steps:
- Preheat oven to 400 degrees
- Slice zucchini slices (about 1/2″ thick)
- Place zucchini in a large bowl and drizzle with olive oil
- Shake to coat zucchini with olive oil
- Add parmesan cheese, salt and pepper.
- Shake to coat.
- Place in a single layer on a large rimmed baking sheet lined with aluminum foil or a silicone baking mat.
- Sprinkle with an additional 2 tablespoons of parmesan cheese
- Bake in preheated oven for 10-15 minutes, finish on a low broil for another couple of minutes.

ZUCCUASH BAKE (FROM NIMZ TERRITORY)
Some recipes become so much apart of your cooking that you make them on auto-pilot & don't remember they qualify as real recipes. This is 1 of those for me. -- 20 yrs ago when I lived in Tulsa & still played competitive tournament bridge, there was a yrly tourney in Fort Smith, AR that everyone in the area attended. It was held in the VFW hall & the big attraction was the wives of the vets cooked all the food for an appy nite Fri, sweet treats Sat & a big Sun dinner meal. This impossibly easy-to-make & tasty veggie dish was the *star attraction* & favorite of the Sun meal, even for the diehard meat & potato guys. They were very protective of the exact recipe, so this is my well-tested copycat version. (10 min was allowed for ingredient prep, but cooking may vary & was estimated). *Enjoy* !

Steps:
- Preheat oven to 350°F.
- Lightly spray a 9-in rd glass pie plate w/cooking spray & set aside.
- Over med-heat in a lrg non-stick skillet, melt butter. Add garlic, sliced zucchini + onion & saute for 2 minutes. Then add sliced squash & cont to cook till onion is transparent & veggies start to soften (approx 3-5 min).
- Remove from heat. Add cream cheese in sml pieces + lemon pepper seasoning salt to taste, stir gently to fully mix w/veggies & put mixture in the prepared dish.
- Combine breadcrumbs w/Parmesan cheese & sprinkle evenly over the top of the veggie mixture. Bake till lightly browned & bubbling (approx 10 min). Serve immediately.
