WACKY CAKE VIII
This cake is make without milk or eggs and is moist, dark and delicious. A brain child of the depression era when ingenious cooks developed a cake that could be made without expensive and scarce ingredients.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, and stir well with fork.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

WACKY CAKE
This dense, moist cake is a great baking project for children. Cooking with kids requires having a lot of tolerance for mess and a willingness to slow down the process.

Steps:
- Preheat oven to 350 degrees.
- In a 9-by-13-inch cake pan, mix all dry ingredients. Smooth them out and make three holes. Put the vinegar in one hole, the vanilla in another and the oil in the third. Then cover the whole thing with the water. Mix it all up with a fork until the lumps are gone.
- Bake 40 or 50 minutes, or until a toothpick inserted in the middle comes out clean. When the cake is cool, frost with butter frosting (recipe below).

1950'S WACKY CAKE
I think we loved the name of this cake as much as the chocolate cake itself. It was always the cake we wanted for birthdays. I have been told that this recipe goes back to the depression and it was called eggless, butterless cake at one time.

- In ungreased 8 or 9 inch cake pan stir together flour, sugar, cocoa, baking soda, and salt. Spread dry ingredients out in pan and make 3 depressions in mixture with your spoon. In one hole, place vanilla. In second place vinegar. In third place melted shortening. Pour water over all. Now mix it all up with a spoon. Be sure to get corners. Bake at 350 degrees for about 30 minutes until cake shrinks from sides of pan. Frost with chocolate frosting.

- Preheat oven to 350 degrees F. Mix first 5 ingredients. In a separate large container, add the baking soda into hot water. Water will rise and fizz so be sure container is large. Slowly fold the soda water into the cake mixture and mix well. Add flour a little at a time while stirring, mix well but do not beat. Pour into a greased and floured 11x15 or 9x13 cake pan and bake about 30-35 minutes. Let cool and enjoy.
