2 INGREDIENT BANANA OATMEAL COOKIES
Bananas and quick oats are all you need to make these soft, sweet breakfast cookies.

- Preheat oven to 350°F. Line a baking sheet with silicone baking mat.
- In a large bowl, add oats and mashed bananas. Mix with a fork until it becomes an evenly mixed, thick batter. If you plan on using add-ins like chocolate chips, mix them into the cookie batter at this time.
- Make 8 round balls out of the cookie batter. Place onto baking sheet, spacing about 2 inches apart. Gently press down on each ball so that it flattens into a round disc. Cookies will not spread much during baking, so keep that in mind when shaping and flattening your discs.
- Bake for about 15 minutes or until cookies are lightly brown and set. Cookie bottoms should also be brown and easily come off baking sheet. Let cookies cool before eating. Store uneaten cookies in the fridge.

- In a bowl, combine the flour, oatmeal, baking powder, salt, nutmeg and the shortening. Cream the shortening with the sugar and eggs.
- Add the dry ingredients to the wet alternating with the banana and buttermilk. Spread into a 9 x 11 baking dish.
- Bake in a 350 oven for 35 - 40 minutes.
- Topping: Combine all the ingredients in a small saucepan. After the cake has cooked for 40 minutes, spread the topping over the cake. Broil with the oven door partially open for 2 minutes. Watch carefully as it could burn.

This is a rather unusually-flavored, but very good, cake. I think it would work well for bridal or baby showers--a good change from plain yellow or chocolate cake. The batter in this may seem runny, but that's how it's supposed to be before you put it in the oven!

- Heat oven to 350 degrees F.
- Grease rectangular pan with shortening.
- Beat in large bowl with wooden spoon bananas, sugar, vegetable oil, buttermilk, vanilla, and egg.
- Mix in flour, oats, baking soda, cinnamon, cloves and baking powder.
- Stir in chopped nuts and raisins.
- Spread batter in pan.
- Bake 30 to 35 minutes or until toothpick poked in center comes out clean.
- Cool completely on wire rack.

- 1. Preheat oven to 350°F. Pour the boiling water over the oats in a bowl, stir well, and cool for 20 minutes. Grease and flour a 9 x 13-inch cake pan.
- 2. With mixer, mash bananas well, and add in the sugars. Beat until smooth. Stir in vanilla. Mix in the oatmeal mixture until combined.
- 3. Stir together the flour, baking soda, cinnamon, salt, and nutmeg. Add in 3 parts to the batter, beating a few seconds after each addition. Pour into prepared pan and bake for about 35 minutes. Remove from oven and leave cake in the pan.
- 4. TOPPING: Melt butter and stir in coconut, chopped nuts, brown sugar, and evaporated milk; blend well. Spread evenly on top of hot cake. Broil the cake about 2-3 inches from heat for a few minutes, until bubbly, but not burned. Watch carefully! Let cake cool at room temperature about 30 minutes before slicing.
