EASY, TWO-INGREDIENT PULLED PORK
Use a slow cooker to make these great sandwiches using just a pork loin and your favorite BBQ sauce. Easy.

Steps:
- Place pork in a slow cooker and add enough water to cover the bottom of the slow cooker.
- Cook on Low for 7 hours. Transfer pork to a bowl and shred with 2 forks. Return pork to slow cooker and stir in barbeque sauce. Continue to cook on Low for 45 minutes to 1 hour.
- Spoon a generous amount of pork into each roll.

SLOW COOKER PORK ROAST
I tried this cut of meat when it was on sale, and for lack of any other ideas I took suggestions from the back of the label, with a few tweaks (like making gravy). This is a very popular dish at our house, and it could not be easier! Instead of rubbing the roast with the onion soup mix and then adding the cranberry sauce, you can also just mix the onion soup mix with the cranberry sauce and pour the whole mixture over the roast.

Steps:
- Rub pork roast all over with onion soup mix and place roast in the slow cooker. Pour cranberry sauce over roast.
- Cook on Low for 8 to 10 hours. Remove roast to a platter, reserving juices in the slow cooker.
- Melt butter in a saucepan over low heat. Whisk flour into melted butter to form a paste. Pour reserved juices from the slow cooker into the butter mixture, whisking constantly, until gravy lightens in color and thickens, about 5 minutes. Season with salt and black pepper to taste. Serve gravy alongside roast.

2-INGREDIENT PEPPERONCINI BEEF ROAST
This is a recipe DH and I begged off a former co-worker, Barbara, years ago. She brought it to a potluck, and our co-workers raved about it. It's a beef roast (your choice of cut) with a whole jar of pepperoncinis and juice dumped into a Crock Pot and cooked on low for 8 hours. The beef turns out amazingly tender and tangy but not spicy, and the peppers soften and absorb the juices wonderfully. Eat the beef with the pepperoncinis or without. Sometimes we serve it on burger buns or without. Left-overs are yummy too--cold or hot!

Steps:
- Place beef roast in a 10 quart Crock Pot and dump in the entire jar of pepperoncinis, including the juice.
- If the liquid does not come to the top of the beef roast, add just enough water to be level with the top of the roast.
- Set Crock Pot on low heat and cook for 8-10 hours.
- To serve, drain juices from meet but reserve pepperoncinis. Shred meat on a platter and arrange pepperoncinis around the outside. Serve on a burger bun or beef only with or without pepperoncinis.
2 INGREDIENT CROCK POT PORK ROAST WITH A BITE
This is a very simple, very yummy crock pot recipe. 2 ingredients and some sub rolls or flour tortillas and it's time to eat! If you like Pepperoncini's (or I guess at Subway they call them Banana Peppers) you will enjoy this! Just one note - If you like it spicier either add more peppers to the pot or make it a day ahead of when you will serve it. I noticed that any leftovers we ate a day or two later were much spicer. My family loves this and it is great to take to pot lucks!

- Put what ever size boneles Pork Roast in you Crock Pot, set on LOW. Pour the juice from the jar of pepperoncini peppers into the crock pot. (12 oz jar works for 2 to 3 lb roast) Pull or cut the stems off the peppers and add them to the crock pot. (They will squirt juice so I do this over the crock pot).
- Put the lid on and forget it. When I get home from work (6 to 8 hours later) all I have to do is shred the pork right in the crock pot, making sure to shred up the peppers too and cover it and keep it warm until we are ready to dish it up.
- We usually serve this on sub rolls, but we have also rolled it up in flour tortillas with some grated cheese.
