MERINGUE COOKIES
This recipe can be doubled, but if you do, don't double the chocolate chips. Best if eaten in a few days.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). To prevent burning you can bake on an air cushion baking sheet or put parchment paper on a regular cookie sheet.
- Beat egg whites, salt, cream of tartar, and vanilla until very firm. Gradually add sugar and mix. Fold in chocolate chips.
- Drop by teaspoonfuls on pan. Bake 300 degrees for 25 minutes. They should only be lightly browned.

Steps:
- Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper.
- In a medium-sized bowl, use a mixer on medium speed to whip the egg whites until foamy.
- Add in the sugar a tablespoon at a time, sprinkling in as you continue to whip the eggs.
- Once the mixture stiffens, scoop into a large pastry bag. Using the star or round tip, pipe onto the baking sheets.
- Place the baking sheets in the oven. Bake for an hour, or until the meringues are dry. Using a wooden spoon, prop open the oven door slightly so that it does not fully close.
- Turn off the heat and leave your cookies in the warm oven for 2 hours. You need to dry out your cookies completely.
- Serve with your favorite coffee or afternoon tea.

BETTY'S EASY MERINGUE COOKIES (2 INGREDIENTS)

Steps:
- Beat whites until very stiff.
- Gradually add sugar and keep beating until mixture forms peaks.
- Grease or spray, with cooking oil a large cookie sheet and put teaspoon amounts on to the sheet about 2 inches apart.
- Place in preheated 225 degree oven on the middle rack and bake for 30 minutes. Check to see if the center of the cookie is dry for doneness.
- If dry, remove from oven and bang sheet- the cookies should jump off the sheet!
- Note: Do not brown!

- Heat oven to 250°F. Line large cookie sheet with parchment paper. In small bowl, combine egg whites, salt and vanilla; beat until foamy. Gradually add sugar, beating 3 to 5 minutes or until stiff peaks form.
- Pipe or spoon mixture into 3/4-inch-wide mounds 1 inch apart on parchment-lined cookie sheet. Top each with mint candy. Pipe or spoon additional drop of mixture over candy to cover. Sprinkle with snowflake sprinkles.
- Bake at 250°F. for 50 to 60 minutes or until crisp. Immediately remove from cookie sheets. Cool 10 minutes or until completely cooled.

CHOCOLATE CHIP MERINGUE COOKIES
This was adapted from another meringue recipe that I got online. What can I say...it's all about the chocolate. I like these two ways...undercooked and chewy/crispy and dried hard and more crisp-ety. These make excellent gifts when dried all the way because they are supposed to keep a long time.

- Preheat oven to 225 degrees.
- In a medium bowl, beat egg whites, salt, cream of tartar, vanilla and cocoa powder until soft peaks form.
- Gradually add sugar and continue to beat until meringue is stiff and glossy (about 90 seconds more after all sugar has been added). Please note that it is important to beat the whites long enough. The cookies will spread and be thinner rather than lofty (as shown in the pic) if poured on the sheet prematurely. You don't want the whites to break (start to get crumbly and break a part) .that will result in failed meringues but you are going to beat these a long time -- sometimes it takes me 5 minutes or more! A stand mixer sure is a plus here. What we are doing is incorporating air into the egg whites. That is what makes these cookies lofty, big and light in texture!
- Gently fold in the chocolate chips.
- On a parchment-lined baking sheet, drop meringue by the 1/4 cup (I like to use an ice cream scoop with a release).
- For chewy cookies with a slightly crispy outer crust: Bake until dry and slightly crispy on outside about 1 hour. Let cool on baking sheets and then remove to an airtight container with sheets of parchment paper in between layers.

- Separate egg whites from the yolks and put them in a large glass or metal bowl. Be extra careful when separating, as the yolks will prevent the egg whites from whipping up properly.
- With the egg whites in a large bowl, whip them slightly with a whisk or on a low setting on your mixer until foamy. If using cream of tarter, add in now while the egg whites are foamy and continue to whip. This will help stabilize the egg whites, helping them hold their shape better. - Turn on your stand mixer (or use a hand mixer) and beat the eggs for approximately six to eight minutes. Slowly add in the sugar while eggs are beating. Adding in the sugar too fast will lead to overbeating. The mixture should be fluffy, stiff, and glossy in appearance. Check to make sure the mixture isn't gritty by rubbing a small amount between your thumb and forefinger. The mixture should sit in stiff peaks.
