2 tablespoons unsalted butter, softened, plus more for greasing
¼ cup light brown sugar, lightly packed
½ teaspoon vanilla extract
2 tablespoons egg, beaten
6 tablespoons all purpose flour
⅛ teaspoon kosher salt
5 ½ tablespoons semi-sweet chocolate chips, divided

Steps:

  • Grease a large (at least 8-inch (20 cm) diameter) microwave-safe plate with butter.
  • In a medium bowl, use a whisk or fork to stir together the butter, sugar. Add vanilla extract.
  • Add the egg and stir to combine.
  • Add the flour and salt and stir until just incorporated
  • Fold in 5 tablespoons of the chocolate chips.
  • Scoop the dough into a mound at the center of the prepared plate. Lightly press the remaining chocolate chips into the top of the dough.
  • Microwave until the cookie is dry on top and springs back when lightly pressed in the center, about 1½ minutes. Let sit for a few minutes to cool.

After 24 hours or so they become hard, but if you put two cookies in the microwave for about 10 seconds, they're soft, warm, and taste fresh-baked.

1 large egg
1/4 cup chopped pecans, toasted
1/4 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt), stirring with a whisk; set aside.
  • Place sugars and butter in a large bowl; beat with a mixer at medium speed until well blended.
  • Add vanilla and egg; beat until blended.

1 cup butter-flavored shortening
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans
1 cup milk chocolate chips
3/4 cup peanut butter chips
3/4 cup English toffee bits or almond brickle chips
3/4 cup sweetened shredded coconut
2/3 cup white baking chips

Steps:

  • In a large bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
