TWENTY-MINUTE CHOCOLATE CAKE
I often make this quick cake in summer when I don't want the oven to be on too long. My husband, two children and I especially enjoy it after a long day of haying.

- In a microwave-safe bowl, melt butter with water and cocoa. In a large bowl, combine the flour, sugar, baking soda and salt. beat in the chocolate mixture; stir in the remaining ingredients. , Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack., Meanwhile, in a small bowl, combine the first four frosting ingredients. Stir in nuts. Pour over warm cake; spread to cover cake.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, cocoa, baking soda and salt. Set aside.
- In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

I make this cake over and over. It is easy to put together and the frosting of the cake is easy and fast. It goes fast around my house.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch pan.
- Sift 2 cups white sugar and 2 cups flour together; set aside.
- In a sauce pan; combine 1/2 cup butter or margarine, oil, water, and 1/4 cup cocoa. Bring mixture to a boil, remove from heat and add to dry ingredients.
- Dissolve baking soda in buttermilk; add with eggs, salt, cinnamon and 1 teaspoon vanilla to cocoa, flour mixture and stir well.
- Pour batter into a 9 x 13 inch pan. Bake at 375 degrees F (190 degrees C) for 20 minutes.
- To Make Frosting: Five minutes before cake is done combine 1/2 cup butter,1/4 cup cocoa and 1/4 cup milk in saucepan and bring to a boil.
- Remove from heat and stir in confectioners' sugar, 1 teaspoon vanilla, and chopped pecans. Pour frosting over hot cake. Cake remains moist and may be frozen. Serves 20.

- In a bowl, combine the first four ingredients; set aside. In a small saucepan, bring butter, cocoa and water to a boil. Immediately remove from the heat. Add to dry ingredients and mix well. , In a small bowl, beat eggs. Add buttermilk and vanilla; mix well. Stir into cocoa mixture. Pour into a greased 15x10-x1-in. baking pan. Bake at 375° for 20-22 minutes or until a toothpick inserted in the center comes out clean., Meanwhile, in a saucepan, bring the butter, cocoa and milk to a boil, stirring constantly. - Mix first 6 items.
- Melt other 4 and add.
- Pour in a 9x13 pan.
- Bake in a 350 oven for 38 minutes.
- That's it. You don't have to grease and flour the pan. You don't have to cream anything. It is so simple there should be a law against it. Just be sure it has cooked through into the middle of the top. It may take a few minutes more or less in your oven. In mine, it takes exactly 38 minutes.
- You can use this cake as the basis for Better than sex cake, or it will take any icing or frosting.

22 MINUTE CAKE
This is my Mom's recipe. Its a cross between a cake and a fudgy brownie. Simular to Texas Sheet cake. I have fond memories of having this cake on Sundays.

Steps:
- Do not use a mixer.
- Combine flour and sugar in a large bowl.
- In saucepan combine butter, water, shortening, cocoa and salt.
- Bring to a boil.
- Pour over flour mixture.
- Combine buttermilk, eggs, soda, vanilla and cinnamon.
- Add to the other mixture and mix all together (will be a little lumpy).
- Pour batter into a 9 x 12 greased pan.
- Bake 22 minutes at 400 degrees Fahrenheit.
- When cake has baked 18 minutes, start combining in large bowl the 1/2 cup butter, 4 Tablespoons cocoa, and 1/3 cup milk.
- Bring to a boil and while boiling stir in 1 pound powdered sugar and 1 cup chopped nuts. Do not remove from heat while stirring in sugar.
- Pour over hot cake as soon as it is removed from oven.
15-MINUTE CHOCOLATE CAKE
Steps:
- Preheat oven to 425. Generously grease a 10-inch springform cake pan and line with baking parchment.
- Break the chocolate into pieces and melt with the butter in a bowl over simmering water.
- In a separate bowl over simmering water, beat the eggs until they start to thicken. Remove from heat and beat about 4 or 5 more minutes. Fold half the eggs into the melted chocolate, then fold in the remainder. Pour the batter into the pan and cover with buttered foil.
- Place in a bain-marie of very hot water. It is essential, if the cake is to cook evenly, that the water comes halfway up the side of the cake pan.
- Bake for five minutes, remove the foil and bake for 10 minutes longer until just set. Remove from the water and cool in the pan. Unmold when completely cool.
