SIMPLE THREE BEAN CHILLI
This simple chilli is sure to be a hit in any household. A smoky and flavourful plant-based dish perfect for cold nights and feeding a crowd.

Steps:
- Heat the the olive oil in a large pan over a medium-high heat. Toss in the onion and garlic and fry for 2-3 minutes until soft.
- Mix the chipotle paste, smoked paprika and chocolate powder into the cooking onions. Then pour in the chopped tomatoes, canned beans and vegetable stock. Stir the pan to evenly combine all the ingredients. Then bring to a simmer and cook for 20 minutes.
- Remove the pan from the heat and mix in the lime juice and chopped coriander. Season to taste.

- 1. Sauté beef, onions, peppers and garlic in oil until meat is no longer pink. 2. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 1-1 1/2 hours. Server over rice or with cornbread. Tips Put lots of toppings on the table-black olives, shredded lettuce, avocado, parve sour cream, tortilla chips, and let every one have fun dressing their own chili. - Heat a large stock pot over medium-high heat. Cook and stir beef until browned and crumbly, 10 to 15 minutes; drain and discard grease. Mix beer, tomato sauce, diced tomatoes, pinto beans, red beans, kidney beans, 2 chopped onions, green bell pepper, red bell pepper, brown sugar, garlic, chili seasoning mix, cornstarch, and mustard into ground beef; bring to a boil. Reduce heat, cover pot, and simmer, stirring frequently, until flavors have blended, about 1 hour.
- Top each serving with about 1 tablespoon Cheddar cheese, 1 1/2 teaspoons onion, and hot sauce; season with salt and pepper.

3 ALARM CHILI
I was in the mood for Chili but I couldn't find a good recipe that I liked. So I took some ideas and created this. =) OF course you can use half a jalepeno, or a chili, or use no pepper for a mild chili- but the jalepeno gives it a nice kick! Add more or less seasonings depending on taste 9 I can't really remember the exact measurements)

Steps:
- Brown The meat in a large skillet ( drain if desired- The fat gives it a better flavor).
- Once cooked through, add the onions, tomatoes, garlic, and a tablespoon of canola oil.
- Saute Until the Onions are slightly browned or colored by the tomatoes.
- Add the seasonings ( EXCEPT the bay leaves).
- Cook two minutes ensuring that everything is coated by the seasonings.
- In a large sauce or soup pot, pour the can of chicken broth inches.
- carefully remove the Browned meat mixture and gently pour into the canned broth.
- Set On Medium- High heat.
- Stir in the Jalepeno and Bay leaves and the two Tablespoons of Red Pepper Paste.
- Cover and let boil five to ten minutes.
- Turn down heat and cook for about 30 minutes ( depending on your stove, cooking times may vary).
- Side Note: While cooking taste the chili and add more seasonings if desired.

- In a large bowl, combine the beans. Transfer 1 cup of the beans to a large bowl and mash with a fork. Set aside the mashed beans.
- Heat the olive oil in a large saucepan over medium heat. Add the onions and sauté for 5 minutes until they start to soften. Stir in the jalapeno, bell peppers, garlic, cumin, paprika, chili powder, salt and pepper and continue cooking for an additional 3 minutes.
- Stir in the beer, tomatoes and water. Bring the soup to a boil and reduce the heat. Simmer for 15-20 minutes until the soup has thickened. Add the whole beans and mashed beans and continue cooking for 10-15 minutes. Top with chives and chips before serving.
