ITALIAN THREE-CHEESE MACARONI

- Cook macaroni according to package directions., Meanwhile, preheat oven to 350°. In a small saucepan, melt butter. Stir in flour, Italian seasoning, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from the heat; stir in cheddar and Parmesan cheeses until melted. Drain macaroni., Spread 1 cup cheese sauce in a greased 13x9-in. baking pan. Layer with half of macaroni, tomatoes and cheese sauce. Repeat layers. Sprinkle with mozzarella cheese. Combine bread crumbs and butter; sprinkle over top., Cover and bake 40 minutes. Uncover and bake 10-15 minutes longer or until golden brown and bubbly. Let stand 5 minutes before serving.

Steps:
- Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. In each of 2 greased 13x9-in. baking dishes, layer a fourth of each of the following: macaroni, meat sauce, ricotta mixture, cheddar and mozzarella. Repeat layers. Top with green onions. , Cool 1 casserole; cover and freeze it for up to 2 months. Cover and bake the remaining casserole at 350° for 15 minutes. Uncover; bake until cheese is melted, 15 minutes longer. , Freeze option: Thaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° until heated through, 35-40 minutes.

Steps:
- Mix one cup of the sauce with the cooked macaroni.
- Mix the ricotta with 3/4 cup of grated cheese, parsley and egg.
- Add salt and pepper to taste and the red pepper flakes.
- Layer sauce on the bottom of a deep casserole.
- Add 1/3 of the pasta followed by 1/2 of the ricotta mixture.
- Sprinkle with 1/3 of the mozzarella.
- Put down a layer of sauce and repeat.
- Add the final layer of macaroni and top with sauce and the remaining 1/4 cup of grated cheese.
- Bake at 375 degrees for about 30 minutes or until the casserole is bubbling and the cheese on top starts to brown.

Wow, Italian comfort food with fontina, parmigiano and provolone cheese. Even my meat & potato loving DS stops dead in his tracks for this! The original recipe from Barrilla omitted any directions for the salt and pepper.

Steps:
- Preheat oven to 350 degrees and bring a large pot of water to a boil.
- Cook pasta 5 to 6 minutes, drain, place in large bowl and toss with melted butter. (IMPORTANT NOTE: If you use a different type or brand of pasta, cook 2 minutes less than time specified on the box).
- Add half of all cheeses to the pasta.
- Combine eggs, half & half, salt and pepper in a small bowl and mix well.
- Add mixture to pasta and mix well.
- Pour half of pasta mixture into baking dish.
- Sprinkle with half of remaining cheese.
- Add remaining pasta, and top with remaining cheese.
- Bake at 350 degrees for 35 minutes or until bubbling around the edges.
