THREE CHEESE HASSELBACK POTATOES

- Preheat the oven to 400 degrees F.
- Peel all the potatoes and, as you peel them, put them in a large container with 1 gallon water and the lemon juice to keep them from browning. Once they are all peeled, remove them from the water and pat dry. Then slice the potatoes about 1/4-inch apart and about three-quarters of the way through to create a series of uniform slices so that they are still joined together at the bottom. This should create a fan type finish to the potatoes.
- Next, using a whisk, blend the butter, parsley, salt and pepper. Make sure to mix well. Dunk the potatoes into the butter mixture, making sure that the slits in the potato soak up the mixture as well. Place the potatoes on a baking sheet and bake for 30 minutes.
- After 30 minutes, remove the potatoes, re-heat any remaining butter and drizzle on top. Divide the cheese mixture over the potatoes. Bake the potatoes until the cheese is melted and the potatoes are cooked through, about 15 minutes. Once melted, remove the potatoes and serve.

- Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
- Preheat oven to 450°F (230°C).
- Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
- Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
- Bake for 25 minutes.
- Remove from oven and top with marinara sauce and mozzarella. Bake an additional 5 minutes. Remove from oven and top with basil.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix cream cheese with 2 cups salsa and 2 chopped green onions in a bowl until thoroughly combined; lightly stir 2 cups shredded Cheddar and 2 cups Monterey Jack cheese into cream cheese mixture. Spoon a scant 1/2 cup of cheese filling in a line down the center of each tortilla and roll tortilla into a log around the filling. Repeat with remaining tortillas and cheese filling. - Make the Basic Dinner-Roll Dough, using the Parmesan as the mix-in. Let rise as directed.
- Lightly coat 2 baking sheets with cooking spray. Turn the dough out onto a lightly floured surface and divide in half. Roll or stretch each half into a 12-inch round, about 1/4 inch thick. Brush each round with some of the beaten egg and sprinkle with the Havarti and Cheddar, leaving a 1-inch border. Lightly press on the cheese to ensure it sticks.
- Cut each round into 12 wedges with a pizza cutter or chef's knife. Starting from the wide ends, roll up each wedge. Place the rolls on the prepared baking sheets, bending the ends slightly to create a crescent. Loosely cover with plastic wrap; let stand until puffy, about 45 minutes.
- Position racks in the upper and lower thirds of the oven; preheat to 375 degrees F. Combine the sesame seeds, poppy seeds and salt in a small bowl. Brush the crescents with the remaining beaten egg and sprinkle with the seed mixture. Bake, switching and rotating the baking sheets halfway through, until the rolls are golden brown, about 25 minutes. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
- Warm the milk and 1/2 cup water in a small saucepan or in the microwave until very warm (110 degrees F). Transfer to the bowl of a stand mixer fitted with the dough hook; mix in the sugar, yeast and 1 cup flour until combined but still lumpy. Let stand until the mixture is very bubbly, about 30 minutes.
- Add the butter, salt and 2 cups flour; mix on medium speed until smooth and elastic, 2 to 3 minutes. Mix in the eggs until combined, scraping the bottom and side of the bowl as needed. Add 1 1/4 cups flour and the mix-ins, if using; mix until the dough is smooth and starts to gather into a loose ball, about 4 minutes. The dough should be slightly sticky; if it's too wet, add the remaining 1/4 cup flour.
- Lightly oil a large bowl; scrape the dough into the bowl and turn to coat with the oil. Cover with plastic wrap and set aside in a warm place until doubled in size, about 2 hours.

- Heat oven to 375 degrees. Spread hazelnuts on a baking pan. Bake until golden brown and fragrant, 10 to 15 minutes. Transfer nuts to a clean kitchen towel. Rub nuts vigorously, removing loose skins. Set aside to cool.
- Reduce temperature to 350 degrees. Butter an 8-inch springform pan. In a small saucepan set over low heat, melt the butter; set aside.
- Using a food processor, pulse graham crackers into fine crumbs, yielding about 1 cup crumbs. Place in a medium bowl; add 1/4 cup sugar, and set aside. Place 1/2 cup toasted hazelnuts in the food processor; pulse until fine but not powdery. Add to graham-cracker-crumb mixture. Using a fork, add melted butter; stir to combine. Put crumb mixture in the bottom of pan, and press evenly around the bottom and halfway up the sides, about 1 1/2 inches.
- Bake crust until golden brown, 8 to 10 minutes. Transfer to a wire rack to cool.
- Reduce oven temperature to 325 degrees. Place cream cheese and goat cheese in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Reduce speed to low. Add 1/2 cup sugar, orange zest, flour, salt, and Frangelico, if using; mix until combined. Add egg yolks one at a time, mixing after each addition. Add mascarpone cheese and orange juice; mix just until batter is combined and smooth. Transfer batter to a large mixing bowl, and set aside.
- Place egg whites in the clean bowl of the electric mixer fitted with the whip attachment. Beat on medium speed until frothy. Increase speed to medium high, and gradually add remaining 2 tablespoons sugar, 1 teaspoon at a time. Continue beating whites until stiff but not dry.
- Using a hand whisk, mix one third of the whipped egg whites into the batter. Using a rubber spatula, gently fold in remaining whites. Pour batter into the prepared pan.
- Bake cheesecake until the top is golden brown and center has barely set, about 60 minutes; the top should be cracked and will sink upon cooling, forming a "bowl." Transfer cheesecake to a wire rack to cool completely. Chill several hours or overnight, then unmold cheesecake.
- Combine orange sections, honey, and dried lavender in a medium bowl. Coarsely chop remaining 1/4 cup hazelnuts, and add. Spoon topping into bowl on top of cheesecake. Garnish with lavender blossoms.

- Rub the inside of a medium, heavy-bottomed saucepan with the garlic; discard the garlic.
- Add the wine and lemon juice and bring to a bare simmer over medium heat.
- In a medium bowl, toss the Gruyere, Emmentaler, and Appenzeller cheeses with the cornstarch.
- A handful at a time, stir the cheese mixture into the wine, stirring the first batch until it is almost completely melted before adding another.
- The fondue can bubble gently, but do not boil.
- Stir in the kirsch and season with the nutmeg and pepper.
- Transfer to a cheese fondue pot and keep warm over a fondue burner.
- Serve immediately with dipping ingredients of your choice.
ITALIAN DELI PASTA SALAD
This pasta salad has all my favorite things from the Italian deli - a trio of meats, a mix of cheeses, and giardiniera. I like to switch it up and use other meats like prosciutto, hot calabrese, or mortadella. Giardiniera comes in mild and hot varieties; use whichever you prefer. A good-quality Italian dressing makes a difference too!
