SPRING GARDEN POTATO SALAD



Spring Garden Potato Salad image

2 cloves garlic, peeled
2 1/2 teaspoons kosher salt
1/2 cup mayonnaise
2 1/2 tablespoons white wine vinegar
Freshly ground black pepper
8 cups water
2/3 cup dry white vermouth
3 cloves garlic, smashed
2 tablespoons kosher salt plus additional for seasoning
1 sprig fresh thyme
1 bay leaf
4 black peppercorns
2 pounds small red-skinned waxy potatoes, sliced into 1/8-inch-thick rounds
5 medium carrots, peeled and sliced into 1/8-inch-thick rounds
1 bunch radishes, sliced into 1/8-inch-thick rounds (about 8)
1/2 English cucumber or 1 large Kirby cucumber, sliced into 1/8-inch-thick rounds
1 cup grape or cherry tomatoes, halved
3 scallions (white and green parts), thinly sliced
Freshly ground black pepper
1/2 cup lightly packed chopped mixed fresh herbs, such as flat-leaf parsley, dill, or tarragon
6 lemon wedges

Steps:

  • For the dressing: Smash the garlic cloves, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put in a bowl and whisk with the mayonnaise, vinegar, and black pepper to taste.
  • For the salad: Put the water, vermouth, garlic, salt, thyme, bay leaf, peppercorns, and potatoes in a large saucepan and bring to a boil. Add the carrots, lower the heat, and cook until the vegetables are tender but not mushy, about 5 minutes. Stir in the radishes, then immediately drain all the vegetables in a colander in the sink. Remove and discard the garlic, thyme, bay leaf, and peppercorns. Cool slightly and toss the vegetables with the dressing. Cover and refrigerate about 30 minutes. (The salad can be prepared up to this point a day ahead.)
  • About 10 minutes before serving, toss the cucumber, tomatoes, and scallions in a small bowl with salt and black pepper to taste. When ready to serve, fold the cucumber mixture and herbs into the potato salad. Serve with lemon wedges.

1 1/2 pounds fingerling potatoes, halved lengthwise
3 large shallots, cut into chunks
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup sugar snap peas, trimmed
2 tablespoons tarragon vinegar or white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 cup heirloom cherry tomatoes, halved if large
2 Persian cucumbers, diced
3 radishes, thinly sliced
1/2 cup chopped fresh parsley
1/4 cup chopped fresh chives
2 tablespoons chopped fresh tarragon

Steps:

  • Put a rimmed baking sheet in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes and shallots with 2 tablespoons olive oil, 1/4 teaspoon salt and a few grinds of pepper. Spread on the hot baking sheet and roast, tossing halfway through, until tender and golden, 25 to 30 minutes. Let cool.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the snap peas and cook until bright green but still crisp, 1 to 2 minutes. Transfer to a bowl of ice water; let cool. Drain and pat dry.
  • Whisk the vinegar, mustard, honey, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Slowly whisk in the remaining 1/4 cup olive oil. Add the roasted potatoes and shallots, peas, tomatoes, cucumbers, radishes, parsley, chives and tarragon. Season with salt and pepper and toss.

2 or 3 sprigs fresh thyme
1 bay leaf
3 cloves garlic, smashed
2 pounds small red-skinned potatoes, cut into 1/4-inch-thick rounds

4 medium carrots, cut into 1/4-inch-thick rounds
3/4 cup fat-free plain yogurt
1/4 cup low-fat mayonnaise
1 tablespoon plus 1 teaspoon whole-grain or dijon mustard
3 scallions, minced, whites and greens separated

2 stalks celery, cut into 1/4-inch-thick slices
1 small Kirby cucumber, cut into 1/4-inch-thick rounds

Steps:

  • Peel a 2-inch-long strip of zest from the lemon; tie into a bundle with the parsley and thyme sprigs and bay leaf using kitchen twine. Put in a saucepan with the garlic, potatoes, 2 tablespoons salt and 8 cups water. Bring to a boil, then reduce to a simmer and cook about 10 minutes. Add the carrots and cook until the potatoes are tender and the carrots are crisp-tender, about 5 more minutes. Reserve 1/4 cup of the cooking water, then drain the vegetables and discard the herb bundle. Let cool. Meanwhile, finely grate 2 teaspoons lemon zest and squeeze 3 tablespoons juice into a large bowl. Whisk in the yogurt, mayonnaise, mustard, scallion whites, chopped parsley, reserved cooking water, 1 teaspoon salt and 3/4 teaspoon pepper. Add the potatoes, carrots, celery and cucumber to the dressing and toss. Chill about 4 hours. Top with the scallion greens.

Steps:

  • Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 20 to 25 minutes or until tender; drain. Cool; cut into 1/2-inch slices.

3 large eggs, beaten
1/4 cup vinegar
1/4 cup sugar
1/2 teaspoon ground mustard

Steps:

  • In a large bowl, combine potatoes, eggs, celery, green onions, radishes, salt and pepper; set aside. For dressing, combine eggs, vinegar, sugar, dry mustard and salt in a saucepan. Cook and stir over medium heat until thickened. Cool. Stir in Miracle Whip; mix well. Pour over potato mixture; toss to coat. Refrigerate for several hours.

3 pounds fingerling potatoes
1 tablespoon plus 2 teaspoons coarse salt
2 tablespoons white-wine vinegar
1 bunch asparagus, ends trimmed
1 cup fresh shelled peas
1/2 cup fresh mint leaves, plus sprigs for garnish
1/2 cup fresh basil leaves, plus sprigs for garnish
3/4 cup mayonnaise
2 tablespoons freshly squeezed lemon juice, (1 lemon)
1/2 teaspoon freshly ground pepper
8 ounces sugar snap peas, strings removed and cut in half
1 fennel bulb, finely diced (10 ounces, 2 cups diced)

Steps:

  • Place potatoes in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and lower to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 15 minutes. Drain into a colander. Using gloves or paper towels to protect your hands, slice hot potatoes into 3/4-inch-thick rounds. Drizzle with vinegar, and set aside.
  • Fill a large bowl with ice and water. Fill a large straight-sided saute pan with water, and place over high heat. Bring to a boil; add 1 teaspoon salt and the asparagus. Cook until just barely tender, about 3 minutes. Transfer to ice bath until cool. Dry, and cut diagonally into 2-inch pieces. Place peas in boiling water, and cook until bright green, about 1 minute. Drain into a colander; transfer to ice bath to stop cooking. Dry on towels.
  • Place mint, basil, mayonnaise, lemon juice, remaining teaspoon salt, and pepper in the bowl of a food processor, and pulse until smooth. Transfer to a large bowl, add reserved potato mixture, asparagus, peas, sugar snap peas, and fennel, and toss to combine. Garnish with basil and mint leaves, and serve.

3 scallions, thinly sliced
1/3 cup pitted black olives, halved

1 large lemon, zested

Steps:

  • Add the potatoes to a medium saucepan with enough cold water to cover by at least 2 inches. Set the saucepan over medium heat. Bring the water to a boil and continue boiling until the potatoes are tender, about 15 to 20 minutes. Drain the potatoes in a colander and allow them to dry for 5 minutes.

  • Cook potatoes in large pot of boiling salted water until just tender. Drain and cool slightly. Cut potatoes into small pieces and place in large bowl.

  • Make the dressing:
  • In a blender blend together the shallot, the mustard, the vinegar, and salt and pepper to taste, with the motor running add the oil in a stream, and blend the dressing until it is emulsified. The dressing may be made 2 days in advance and kept chilled in a tightly sealed jar.
  • In a large saucepan combine the potatoes with enough water to cover them by 1 inch and simmer them for 20 minutes, or until they are tender. Drain the potatoes, peel them, and let them cool. The potatoes may be prepared up to this point 1 day in advance and kept covered and chilled. Slice the potatoes 1/4 inch thick and arrange them decoratively on a platter with the tomatoes, cut into wedges, and the mustard greens. Pour the dressing over the salad and sprinkle the salad with the chives.

2 medium Yukon gold potatoes, (about 1 pound)
2 medium sweet potatoes (about 1 pound)
1/4 teaspoon coarse salt, plus more for water
Reserved poblano pieces
Poblano and Tomatillo Dressing
1 bunch red-leaf lettuce, washed and torn into bite-size pieces
1 small bunch romaine lettuce, washed and torn into bite-size pieces
1 teaspoon extra-virgin olive oil
Pinch of freshly ground pepper
8 ounces assorted heirloom and cherry tomatoes
6 ounces fresh goat cheese, cut into 12 disks
2 scallions, sliced into very thin rings

Steps:

  • Place the potatoes in a large saucepan of cold salted water. Bring to a boil, reduce to simmer, and cook until the potatoes are just tender, 20 to 25 minutes. If sweet potatoes are done before, remove with slotted spoon to colander. Drain the potatoes in colander, and rinse with cold water. When cool enough to handle, peel, and cut into 1-inch chunks.
  • Transfer potatoes to a medium bowl; add reserved poblano pieces and half of dressing. Stir to combine well. Place lettuces in large bowl. Drizzle with olive oil, and sprinkle with salt and pepper. Cut tomatoes into halves, slices, or wedges, and toss well with greens.
  • If plating salads individually, arrange greens on six plates, and divide warm potato salad evenly among them. Top each salad with a disc of goat cheese, and a sprinkle of scallions. Serve remaining dressing on the side.

SUMMER POTATO AND TOMATO SALAD

1 1/2 pounds tiny new potatoes
1 large clove garlic, minced
1 large shallot, minced
3 whole roasted peppers
15 small black Italian, French or Greek olives, pitted
2 tablespoons chopped fresh basil
1 1/2 cups nonfat plain yogurt
1 1/2 teaspoons Dijon mustard
1 1/4 pounds ripe plum or field tomatoes

Steps:

  • Scrub potatoes but do not peel. In a pot, cover potatoes with water, cover pot and cook until tender but firm, about 20 minutes depending on size.
  • With food processor on, put garlic and shallot through feed tube.
  • If using canned roasted peppers, rinse well and mince in food processor. Combine with garlic, shallot and olives in serving bowl.
  • Add basil to bowl with yogurt and mustard. Mix well.
  • Wash, trim and cut tomatoes into quarters or eighths. Chop by pulsing in food processor. Add to dressing.
  • When potatoes are cooked, drain and cut into small chunks and stir into dressing.

New potato & sundried tomato salad image

This simple salad is a flavourful, vegetarian side - perfect for al fresco summer dining

500g new potatoes
4 tbsp crème fraîche
4 tbsp mayonnaise
1 tbsp olive oil
pinch caster sugar
8-10 sundried tomatoes , sliced
small bunch parsley , roughly chopped
2 spring onions , sliced

Steps:

  • Cook the potatoes in plenty of boiling, salted water until tender. Drain and cool under cold running water. Remove the skins and set the potatoes aside for later.
  • In a small bowl, mix the crème fraîche, mayonnaise and olive oil with the sugar and some seasoning. Then stir in the tomatoes, parsley and spring onions.
  • Add the potatoes and coat in the creamy dressing, trying not to break up the potatoes. This can be made a day ahead and stored in the fridge.
