Stilton, Pear and Walnut Tea Sandwiches image

Blue cheese, pears and walnuts are traditionally an English combination used for many dishes, and especially good in tea sandwiches.

6 ounces stilton blue cheese
1 ripe pear
2/3 cup walnuts, toasted (see recipe for Toasted Walnuts)
8 slices bread (white or dark)
4 tablespoons unsalted butter, softened
1 small shallot, chopped fine (or onion)
salt and pepper (optional)
fresh tarragon, chopped fine (or herb of choice)

Steps:

  • Toast the walnuts, then finely chop.
  • Remove the core from the pear and slice thinly. Set aside.
  • In a bowl, combine the crumbled cheese and nuts.
  • Add the butter, tarragon, shallot, optional salt and pepper to this mixture and mix well.
  • Spread the seasoned butter onto 8 slices of bread.
  • Lay thinly sliced pears on four of the bread slices.
  • Cover with the remaining four slices of bread.
  • Wrap each sandwich securely with plastic wrap and refrigerate until cold and mixture is set.
  • Unwrap the sandwiches and trim the crusts.
  • Cut each sandwich into 4 triangles or squares.
  • Note: To add a little color to the sandwiches, you might like to sprinkle a bit of the herbs on top of each square or trangle.

1 tablespoon butter
1 ripe pear, peeled, cored, and sliced thinly (If a ripe pear cannot be found, saute slices in a tablespoon of butter over medium heat for 5 minutes, or until tender. Or use canned pears.)
3 ounces Stilton, sliced or crumbled finely
4 slices raisin bread (ideally, cinnamon raisin)

Steps:

  • Divide ingredients in half and assemble two pear-and-Stilton "sandwiches".
  • Melt butter in a saute pan over medium-low heat.
  • When butter is fully melted, place both sandwiches in pan, cover, and cook for 2 minutes per side, or until browned like a conventional grilled-cheese sandwich. Keep a watchful eye on the pan when cooking the dessertwich; raisin bread will begin to burn only moments after it is browned to perfection.
  • Remove from pan and slice each sandwich diagonally into 4 triangles. Serve immediately (ideally with Port).

4 very thin slices honey-oat bread
1 tablespoon butter, softened
1 ripe pear, halved and thinly sliced
Lemon juice
2 tablespoons crumbled Stilton cheese (about 1/2 ounce)

Steps:

  • Spread each bread slice with the softened butter. Sprinkle the pear slices with the lemon juice. Place half of the pear slices in a single layer on a slice of the bread. Top with half of the crumbled cheese and a second bread slice. Repeat, using the remaining pear slices, cheese and bread.

Pan-Roasted Pears With Honey, Hazelnuts And Stilton image

1/2 cup hazelnuts
2 teaspoons unsalted butter
2 large, firm pears, peeled, halved and cored
1/3 cup honey
4-ounce wedge of Stilton cheese, quartered

Steps:

  • Preheat oven to 350 degrees. Place the hazelnuts on a baking sheet and bake until toasted, about 10 minutes. Place the nuts between 2 kitchen towels and rub to remove as much skin as possible. Coarsely chop the nuts and set aside.
  • Melt the butter in a medium-size cast-iron skillet over medium-high heat. Add the pears and cook until caramelized on both sides, about 3 to 5 minutes. Lower the heat and add the honey to the skillet. When the honey melts, turn the pears to coat them on both sides. Cover and cook until the pears are tender but not too soft, about 5 minutes.
  • Cut each pear half across into 1/4-inch-thick slices, but keep the shape intact. Place each pear half onto 1 plate and fan it forward. Place a piece of Stilton beside the pears and scatter each plate with some of the hazelnuts. Serve immediately.

1 cup crumbled Stilton cheese
2 tablespoons mayonnaise
1 tablespoon prepared horseradish
8 3x5-inch sourdough bread slices
1 pound thinly sliced roast beef
1/2 red onion, thinly sliced
1 bunch arugula, stems trimmed
2 tablespoons (1/4 stick) butter

Steps:

  • Mash first 3 ingredients in small bowl until almost smooth. Place bread on work surface and spread mixture on 1 side of each slice. Top each of 4 bread slices with 1/4 of beef, then onion and arugula. Season with pepper. Top with remaining bread, cheese side down.
  • Melt butter in heavy large skillet over medium-high heat. Add sandwiches and cook until golden, about 2 minutes per side. Serve hot.
