3 Ingredient Healthy Oat Bread image

This healthy oat bread is made with just 3 easy ingredients. It doesn't contain any yeast, wheat flour, oil, sugar, or eggs.

3 cups (276 grams) oat flour
2 tbsp (14 grams) baking powder (aluminum-free)
12 oz (1 ½ cups) plain whole milk yogurt

Steps:

  • Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
  • In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
  • Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
  • Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
  • Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

This low calorie bread clocks in at under 50 calories a slice and is perfect as toast, sandwiches, and more! Made with healthy ingredients, it's soft, fluffy, and with a light crumb!

2 cups white whole wheat flour (or whole wheat flour)
1/2 cup wheat germ (toasted)
2 teaspoon salt
2 tablespoon sugar
2 packages active dry yeast (1/2 ounce)
2 cups warm water (45C/113F)
1 cup plain yogurt (room temperature)
2 tablespoon olive oil
3 1/3 cups bread flour (* See notes)

Steps:

  • In a small bowl, add the white whole wheat flour, wheat germ, salt, and sugar, and mix until combined. In a large mixing bowl, add the yeast and warm water and let it dissolve. Add the bowl of mixed dry ingredients, along with the oil and yogurt, and whisk until combined. Gently fold through the bread flour until a firm dough remains.
  • Transfer the dough onto a lightly floured surface and gently knead the dough until smooth and elastic. Lightly grease two mixing bowls. Divide the dough into two portions and place each ball of dough into the greased bowls, and roll around, until the exterior is covered in some of the oil. Cover each bowl of dough and let it sit in a warm area for around an hour, to double in size and rise.
  • Grease two 9 x 5-inch loaf pans and set them aside. Remove the balls of dough and place them once more on a floured surface. Shape each ball of dough into a loaf shape and place them into the greased loaf pan. Cover the pans and let them rise until around double in size, approximately 30 minutes.
  • Preheat the oven to 185C/375F. Place the loaves in the oven and bake for 35-40 minutes, or until golden brown on the outside. Remove the loaves from the oven and let them cool in the pan for 10 minutes, before carefully transfer them onto a wire rack to cool completely. If desired, brush the crust with butter or olive oil.

  • Place the flour, salt and yeast in a large bowl. Then pour the warm water over top, making sure it's not too hot.

  • Preheat the oven to 450°F. Place a baking stone, a pizza stone or a iron skillet flipped over into the oven. You'll want the bread to cook on a hot skillet, so let it preheat for about 20 minutes.

  • The night before you want to bake the bread, stir together the flour, yeast and salt in a large mixing bowl. Add the warm water into the bowl and stir to combine until a loose, shaggy dough forms. Pack the dough into a bit of a ball, then cover the bowl tightly with saran wrap and leave on your counter for overnight (12-18 total hours of rise time), in a warmish place, away from any cool drafts.
  • When the bread dough has risen to about double in size, it’s ready to bake. About 2 hours before you’re ready to bake, empty the dough onto a floured surface and use your hands to shape the dough into a smooth ball. Place the dough ball on to a piece of parchment, on top of a clean dish towel. Cover the ball gently with the towel, letting it sit like that until you’re ready to bake.
  • 30 minutes before you’re ready to bake the bread, place a Dutch oven or a baking stone in the oven and preheat the oven to 450 F. After 30 minutes has passed, use oven mitts to remove the Dutch oven from the oven and carefully place the dough ball, in the parchment, into the vessel. You can slash a small cut through the top of the bread here, to allow steam to release.
  • Place the lid on the Dutch oven then place it back into the oven, to bake for 30 minutes. After 30 minutes, remove the lid, and turn the oven down to 375. Bake for an additional 15 minutes.
