2 1/2 to 3 1/2 lb boneless beef chuck roast

Steps:

  • Spray 5-quart slow cooker with cooking spray. Stir oil and taco seasoning mixes in slow cooker. Add beef roast; turn to thoroughly coat beef.
  • Cover; cook on Low heat setting 7 to 8 hours or until beef is tender. Remove beef to cutting board; cool slightly, and shred into bite-size pieces with fork. Return to liquid in slow cooker; toss to coat.

6 boneless skinless chicken breasts (mine were frozen)
1 (16 ounce) jar salsa
1 (1.25 ounce) package taco seasoning
12 taco shells (or flour tortillas)
1 cup guacamole
2 cups shredded lettuce
1 1/2 cups shredded cheddar cheese
2 tomatoes (diced)
1 (6 ounce) can olives (sliced)
1 cup sour cream

Steps:

  • Spray your slow cooker with non-stick cooking spray for easy clean-up. Place chicken in the bottom, pour salsa on top, and sprinkle with taco seasoning.
  • Cook on high for 4 to 6 hours or on low for 6 to 8 hours.
  • When chicken is done cooking, it will shred easily when stirred with a fork.
  • Place the chicken on crunchy taco shells or flour tortillas.

1 cup salsa, divided
4 (15 ounce) packages slider-size burger buns
2 medium (blank)s avocados, diced
½ cup sliced black olives
3 medium jalapeno peppers, sliced
½ cup Mexican crema, or to taste
1 (8 ounce) package shredded Mexican cheese blend, or to taste

Steps:

  • Melt butter and grapeseed oil in a stockpot over medium-high heat. Cut roast into 3 equal pieces and season with taco seasoning. Sear roast on all sides, 8 to 10 minutes.
  • Pour 1/2 cup salsa in the bottom of a slow cooker. Transfer roast to slow cooker and top with remaining salsa.

2 ½ pounds beef chuck roast
1 ounce taco seasoning
1 cup salsa verde
15 ounces corn (drained)
½ cup beef broth
8 taco shells
1 cup shredded cheese (optional topping)
½ cup sour cream (optional topping)
1 tomato (diced, optional topping)
1 cup shredded lettuce (optional topping)

Steps:

  • Place roast in the slow cooker, and cover with taco seasoning.
  • Pour one cup of salsa Verde over top. Add one can of corn (with the juice) and 1/2 cup beef broth.
  • Cook on high for 3-4 hours, or low for 6-8. When it is finished cooking, pull from the slow cooker and shred, placing it back in the slow cooker when finished.
  • Mix the shredded beef with the corn and liquid.
  • Serve with favorite taco toppings: cheese, sour cream, tomatoes, and lettuce.

1 (3 pound) beef tri-tip roast, fat layer left untrimmed
2 teaspoons garlic pepper seasoning (such as SuzyQ's Santa Maria Valley Style Seasoning®), or to taste
2 tablespoons olive oil
2 tablespoons minced garlic
2 onions, chopped
2 teaspoons ground ancho chile pepper
2 teaspoons cayenne pepper
2 teaspoons ground black pepper
1 ½ cups white wine
1 (28 ounce) can crushed tomatoes
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Spray the inside of a slow cooker with cooking spray. Season the tri-tip roast with garlic pepper seasoning on both sides.
  • Heat olive oil in a large, heavy skillet over medium heat, and sear the roast on all sides until well browned, about 5 minutes per side. Place the tri-tip roast into the slow cooker, fatty side up.
  • Cook and stir the garlic and onions in the hot skillet until golden brown, about 10 minutes, and season with the ancho chile pepper, cayenne pepper, and black pepper. Place seasoned garlic and onions over the roast in the cooker, and pour in the white wine and crushed tomatoes. Cover the cooker, set to Low, and cook until tender, about 8 hours.
  • Remove roast from the cooker, and cut off the fatty layer with a sharp knife (tender meat should cut easily). Place the roast back into the cooker, and shred meat with two forks. If desired, remove some of the liquid from the meat. Stir in cilantro and serve.
