Roasted chicken drumsticks, flavorful with herbs and spices, are nestled in a bed of crisp sweet potatoes, white potatoes, and onion in this easy sheet pan dinner.

2 medium sweet potatoes, cut into 1-inch pieces ( (1 ½ lbs.))
1 medium russet potato, cut into 1-inch pieces ( (½ -¾ lb.))
1 medium yellow onion, chopped
1 tablespoon extra-virgin olive oil
2 teaspoons fresh rosemary, roughly chopped ((see notes))
1 teaspoon fresh thyme, roughly chopped
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon coarse ground pepper
1 teaspoon salt
3 pounds chicken drumsticks ( (7-8 drumsticks))

Steps:

  • Preheat oven to 450°F.
  • In large bowl, toss potatoes and onion with olive oil and half of the spice/herb mixture. Spread evenly in large rimmed sheet pan.
  • In same bowl, toss drumsticks with remaining spice mixture. Position the drumsticks on top of the potato mixture.
  • Roast for 20 minutes. Remove from oven and stir potatoes. Return pan to oven and roast for an additional 10 minutes, or until an instant read thermometer inserted in the thickest part of the leg reads 165°F.
  • Serve immediately.

8 chicken drumsticks
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon jarred minced garlic
2 teaspoons Italian herb blend
1/2 teaspoon salt
1 lemon (sliced)

Steps:

  • Preheat oven to 450 degrees F (230c)
  • Add drumsticks to a large bowl along with olive oil, lemon juice, garlic, dried herbs and salt
  • Toss to coat well and place on baking sheet
  • Bake at 450 F (230c) for 15 minutes then flip chicken
  • Switch oven to broil, top with lemon slices and cook for an additional 5 minutes until internal temperature of chicken reaches 165 F (74c)
  • Garnish with fresh herbs and fresh lemon juice for serving

  • Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper.
  • In small bowl, mix rosemary, thyme, mustard, oil and salt. Brush or rub mixture over chicken. Place on cookie sheet.

¼ cup olive oil
1 large lime, juiced, or more to taste
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon dried parsley flakes
½ teaspoon ground black pepper
10 skinless chicken drumsticks

Steps:

  • Combine olive oil, lime juice, garlic powder, onion powder, chili powder, oregano, parsley, and pepper in a gallon-size resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  • Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Let chicken come to room temperature, about 25 minutes. Arrange on the baking sheet.
  • Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more.
  • Cover chicken with aluminum foil. Let stand before serving, about 5 minutes.

Olive oil (or butter)

Steps:

  • Heat oven to 425. Chop 1/2 cup parsley, dill, mint or a combination (a little minced garlic wouldn't hurt).
  • Put 4 tablespoons olive oil or butter in a roasting pan and put it in the oven for a couple of minutes until oil is hot or butter melts.
  • Roll the chicken in the herb mixture, then add it to the pan; return the pan to the oven.
  • Roast, turning once or twice, for 10 to 15 minutes, or until just cooked through.
  • Garnish: More herbs.
